Soda Bread

There is this Onion Pan Bread from Mark Bittman's "How to Cook Everything". I didn't see any credit in the link, but it's the exact same recipe that is in my copy of HTCE.

 

Might not be Irish, but it's a quick bread and very delicious. I tried it as is the first time, but subsequently make it without the sugars called for, as I think the onions provide all the sweetness it needs. Oh, and we all know that onions take longer than 10 minutes to properly caramelize.
