Last week I was gifted with a large pan of yellow rice with peas, onions and mushrooms. There is enough to feed an army and I am not sure how to use the rest. Any thoughts out there on reimagining these leftovers?

I'd divide it into sections and freeze it. There's nothing in it that shouldn't freeze well.

I don't understand why rappers have to hunch over while they stomp around the stage hollering.  It hurts my back to watch them. On the other hand, I've been thinking that perhaps I should start a rap group here at the Old Folks' Home.  Most of us already walk like that.

I could freeze it, but I am sure it will only die a slower death in the freezer.

Make Chinese fried rice and serve it for breakfast, along with a couple of fried eggs and some sliced sausage (or other protein). For the fried rice, you don't need much else -- maybe a couple of garlic cloves, minced and some soy sauce.

Lots of varieties of soup go quite well with a few handsful of yellow rice with peas, onions and mushrooms tossed in.
