  1. A lot of places have zero tolerance for any form of violence and knowing how California law is it would not surprise me that this is the case. There are a few other HR areas that I have personally seen this to apply; Weapons, drugs and stealing. It is seen by some as a way of curbing law suites of many types from occurring. Your analogy being a prime example of why some companies adopt zero tolerance policies. In most states showing you have a written policy can head off lots of legal situations.

  4. Lots of places around Kings Highway that might due. Or are you talking about the area just past the GSP? As I remember there is not a lot on RT. 40 for the greater part of the trip. Afew tavern type places with good burgers but I would be hard pressed to remeber the names. Some of that area can be strange at night.
  5. I have lived in Montclair and Toms River for most of my life before comming to Chicago. I have picked up “diamonds” in Cape May and cruised South St. in a little town you hail from in the next state over. To do the state any justice would take several shows, four in my estimation. Lots of ground to physically cover and a lot of good and not so good places to see as well as eat not to mention all the fun things there are to do. Like a little known sub shop out Rout 528 in Jackson, they make some of the best subs in the area and it is in a deli located at the back of a general store. If we look at the show from the perspective of his stomping grounds as a teen, it comes off better than trying to represent the stat in total.
  6. Advertising costs are usually 100% deductible and too that end you may want to run your own fax service. Several companies make fax software that will do broadcast faxing. Figure a way to build your list of interested people and run it in house. The software is generally under $80.00, I happen to like using Symantec’s Winfax Pro. As it is easy to use and runs like a virtual printer. It can also be set up to fax things like menus automatically to people calling in.
  7. Trotter also was sued for improper use of pooled tips under a state law forbidding tip pools to be used to offset the pay of nontipped employees. Other states also have this sort of law. The case is still pending as far as I can see. The hospitality industry is the only one where I see the patron being asked to subsidies payroll expenses. Steve brought up how he was paid at his firm and it sounds like the system sucks. I would much rather be paid on my billable hours and percentage of settlements but that is more in line with personal injury, employment and some aspects of intellectual property law. It might be interesting as an experiment to make it more like a hair solon; you get the space to practice your craft and basic support but have to provide your own tools or rent the tools from the salon. Another scenario is running it like any other service; it might increase the price to the customer but it would fluctuate for both the participants and the customers. A well run trendy place with good overall costs could pass that savings to the customer; bad performance would be weeded out due to internal pressures. The government in the USA has no obligation to us as far as a lot of the points mentioned; the companies have little obligation other than to obey the law, turn a profit for the owners and pay taxes, employees are left in this case with doing as little as they can to maintain a job. People that work on commission fall into two areas in the long run. Those that strive to improve and are rewarded and quick buck artists. Sadly the current system favors the later. A service charge gives the patron the choice of doing business in advance; tips put the control (under most US law.) in the hands of the patron. The teamwork argument to me is the most ironic. Did Rodman earn the same as Jordan? Did Reggie Jackson get paid as much or less than the rest of the team? You need to pay people on measurable performance in any case. I think the average American would pay more for a meal than tip or pay a service fee. Faced between that and raised taxes to pay for social services to other people. Why else would the Teamsters divide with the AFL/CIO? Too much based on being a member rather than the job you do is one large part. In the end your meal cost is fixed; how it is divided is still the question at hand. A lot of the arguments are valid and should be explored and some don’t even merit thought. I suspect that the nonconfrontational prefer tipping and the more aggressive prefer a service charge. There are others that are so price fixated that it is not an issue as long as it meets with there expectations.
  8. A better idea might be to do a post card mailing asking for people interested to call and give a fax number. Offer them a discount on orders and see how it goes. Have it printed on your menus that you gladly fax or e-mail menus to people. Make sure you offer insider only specials to your recipients and business will grow.
  9. My criticism is he spent too much time in the north part of the state. Asbury Park is not the shore Seaside is the Shore and still vibrant. I know it is hard to put it all in an hour show but it would be like doing a show on Chicago and never leaving the Loop. The HoJo on 35 and 66 would have been a better place for him to stop. There is another world south of Perth Amboy that begs to be explored.

  11. You can do a lot with one of those utility lamps like they sell at most home improvement stores with the clamp, ceramic socket and aluminum reflector. They can be used to create an oven or hot plate with a few items from the dollar store. Use a 75 Watt bulb and you are set to do all kinds of neat stuff. Think easy bake oven on ‘roids.

    Eggs are used to clarify some wines and I am sure that other animal products are used too. But as others have mentioned there are other microbes involved in wine making. Yeast would be a prime example.

    Reheating roast beef.

    I use a steamer set with beef broth to heat mine. If you spread it out right it heats in a few moments and does not overcook the beef.
  17. I may not be a lawyer but I do know that such clauses are complete Bull. They are overturned in court on a regular basis. Unless there is some reason you need to keep these people as friends I would open up whatever you want, where you want. Restraint of trade is a serious issue and unless these people are covering all your bills you owe them nothing.
  18. I was thinking about the chemical taste noticed in the grits dish. It may have been from the preservatives in the cream cheese, some of the brands tend to weep if not kept cold. Salt or sugar would make the taste more prevalent as would heat.
  19. I think this gets into an interesting and slightly dangerous area; where self-assessment ends and hype begins. But so much of what goes on in business is based on some “jock-mindset” model. If the product costs more, takes longer to get, is harder to use and hurts a significant number of users the company will still try and play themselves off as the best. Likewise when a company looks for employees that are experts in the technologies as well as totally customer oriented; few such people are truly that good. The same thing if a company wants to hire a person with more years experience than the product has been available or even better one that has experience with something that is only done in that industry by that company. In any of those cases expectations and bragging will ultimately bring disappointment. The three industries this seems to be most prevalent in are hospitality, sales and technology. A braggart chef or technician can screw up the workplace faster than anything if given the chance. I think in the case of this show the wrong two people made the final cut. To my way of thinking autumn and Katie should have been the final two. Autumn was not as aggressive as she should have been nor as articulate and that hurt her the most.
  20. The only restaurant called The Farmingdale House that I know of was located in Farmingdale (near Adelphia and Freehold), and it closed quite some time ago. Has it re-opened? Or is there now another restaurant with that name in or near Spring Lake? ← Sorry to hear that it is no longer in business. I have not been at the shore in a number of years and am working from memory. Kobe on the Howell Lakewood border on Rt. 9 was a good Japanese steak house. You might want to check there. I wish I could remember the names to some of the places closer to you. I used to work along Rt. 35 from Sea Girt to Redbank. Sadly many of the places are gone.
  21. I would be looking in the ethnic grocery stores for different brands. You may find what you are looking for at a German pork store or Italian place. Try some of the darker roasts, as they tend to have more body. Your guy may even be able to roast what you are looking for if you can describe it to him. The basics of coffee and tea making are easy enough but it is still a personal preference. I have had wonderfully made coffee out of a $20 Mr. Coffee type maker and some undrinkable sludge from a French press. Though you may want to get a press and experiment to see what you like better. Time and temp have a lot to do with the outcome as well as grind. It depends on the characteristic of the bean and how it is ground. There become points of overlap like lower temp and finer grind Vs larger grind and higher heat, you want it hot enough to extract the proper flavor but not destroy the oils and other flavor compounds.
  22. You could also grow it in a pot on your window sill. Burpee Seeds has the seeds and it is quick to grow.
  23. While for the most part I agree with this sort of policy, what about the reverse? Party of eight and six are ready to seat and order starters and the unit does not have a bar area to utilize.

    I would dry some for times it is not in season. tie small amounts with string and hang in a warm dry place from the stems leaf down. This also caqn be used to flavor tea. mint spreads in a garden unless you have something under ground to prevent runners in the roots. roof flashing works well to contain this type of plant.
