  1. Lovely place, the only problem is you have to buy and drink their sorry excuse for wine. Really, PA wines or for that matter NJ wines? ← At least 5 that I know of and most of them in the way south of the state.
  2. Tofu covers a lot more ground than those white chunks in the refer case. Morning Star Farms and other companies make all sorts of meat replacements. I know they have an artificial egg that makes a good egg salad nock-off along with bacon like and sausage like products. It might be worth looking into depending on what you are trying to make.   3. Tp get people to come in and buy hopfully more than just the special. In the US many places do this and depending on the size of the advertisment would effect the cost. Larger getting more visability and hence more money.
  4. The other few Items I would like to add to this. Don't overextend yourself and try to make up for it over time. Make sure that the cost of labor and other factors are included when you cost out product. Try not to buy twice on yopur equipment. By thisI mean don't get the (smaller, cheaper or whatever.) with the thoughts of replacing it with what you realy want.

  10. Working at TGIMcFunster is closer to assembly line work than cooking. You are not allowed to even taste what you are cooking. So to work at Monday’s the skill set is more about keeping up and proper timing than techniques. All you have to do is follow and learn the steps from the corporate manual. In small shops or high end places you may have to know a lot more especially at the better positions. I will admit that most people can be trained to perform a task even if they don’t understand what they are doing. Most of us that drive no little about how a car works, you don’t need to in order to drive but most have some understanding of the basics. In most businesses Sales makes more than Technical and some management. Look at a car dealership for an example. The sales people make way more than the mechanics ever do. If you look at it closely the same lines come into play the way the ground is broken up. Those who perform and can apply there skills earn more and work in better positions with better pay. The FoH/BoH lines even seem to be roughly the same as how you advance and what you do. BoH you start in prep and work up to basic mechanic (oil changes and stuff) than to more challenging but limited repairs like brake jobs and tune-ups then on to full tech and possibly management. FoH the same thing come in as a trainee and advance to sales from there to closer and then to team leader and finely Desk. Think of desk as Mater D’s of sorts as they handle business flow.

  14. It has been a few years but I seem to remeber that most business closed at 7 PM. At least in the heart of the city, later in the outskirts.

    I get people asking me to cook for them and I politely refuse. I will then refer them to caterers that I have worked with.

  17. Getting in someplace to learn more is the goal. Too early to think about reputations at this point. It even lends tone to wanting to move on at some point.

  19. Is the chicken raw or cooked when you start? I use leftover roasters for my stock and get good results.
  20. Find a place looking for people and apply. If you are honest about your skills they may hire you as a prep person. Avoid places that look for people too often as that is a bad sign. Try a smaller famly run place as you will learn more in a shorter time frame. Depending on where in NJ you are it might be quite easy to find a place. As some of the places gear up for summer right about now. Willingness to work and learn sometimes work in your favor. You are a blank slate with no bad habbits and that can be an advantage.
