    Had a small, sliced ham in the freezer for a while and I was afraid it was going to get freezer burn, so thawed it out and used some on pizza last night. I'll vac pac the rest so it'll stay good for longer.
  2. Here in Kansas we're having a big spike. Lots of meat packing plants are being tested with many sick . Face masks here too. But, to make you feel a bit better, I envy your delivery of such wonderful food! Envy in a good way . I can't get anything delivered where we live.

    Eggplant. I want. I usually try to grow some, but this year we didn't go to the nursery ....Ronnie did really well growing in the greenhouse here at home. Except I didn't buy eggplant seeds 'cause I usually just buy plants. Oh well, I guess there is always next year.

  6. How timely. I just made them a couple months ago using this recipe. I'm sure I would have posted about them somewhere around here. I was able to the tapioca flour from amazon, but that was before the plague. I really really liked them. Even good reheated the next day.

    I had one ear of corn that's been unshucked in the fridge for weeks. Was pleasantly surprised to find it still good. So I made a sort of Mexican street corn salad. Boy those corn kernels certainly pop all over the kitchen when roasting lol. I had no feta cheese so I subbed some chile flavored diced cheese curds. I'll make this again. I diced and seasoned up a chicken breast (fajita type seasoning) and threw it in the SV bath for about 45 mins. Then threw a cut up onion and the chicken on a screaming hot pan. Then added diced Hatch chiles from the freezer. Chicken quesadillas. Oh and the required margaritas.

    Just to make it more tender......guess we could have tried grinding it without doing that, but then what would keep Ronnie occupied for those 2 hours lol.

    We used Broadbent's ends of ham. Ronnie cut most of the fat off of each piece. Put in a pot, cover with water and lid. Simmer for 2 hours. Then he put it through the grinder.....food processor would probably work too. Then I put one onion and a few celery stalks in the food processor and chopped until small. Add that plus mayo, mustard, black pepper, hard boiled eggs (2), a splash of LA hot sauce and some garlic powder. Oh and I used my sweet dill relish....the sweet balances the salty IMO.

    Ronnie simmered some Broadbent's ham for a while yesterday and then put it through the grinder. He wanted ham salad. Hard boiled eggs, mayo, pepper, sweet dill relish, onion and celery chopped very small in the food processor.

    Aww thanks! Crushed cornflakes. I've been out of panko forever, but I seem to have a neverending supply of cornflakes lol. Dip in flour, then egg/milk then crushed cornflakes.

    Ronnie has been almost perfect about staying home and away from people. He's much more of a "goer" than I am. He's in the high risk category so I've been the one going in to get groceries, prescriptions etc. I've been out much more during this pandemic than I was before sigh. Always being safe, not touching face or hair, wearing a mask and I bring a few precious Clorox wipes with me in a ziplock. Anyway, it was a beautiful day yesterday and Ronnie really wanted to go fishing at a lake about an hour from here. We decided I'd stay home with the dogs and he would go unless when he got there the lake was packed with people. Only 4 boats on the whole lake! So, he got to be out for a few hours and brought some crappie and white bass home without being around a single soul . So asparagus salad, fish and mac and cheese last night
  19. I'm putting this here even though it's goose. Corned some goose breasts. Did them in the IP for an hour and a half. Good texture and ok taste.....I think next time I need to inject them with the brine and use more pickling spice.

  22. @liamsaunt Nice haul!!! I suggest shredding the taters and freezing them for hash browns . Not trying to cause a panic or anything but taters are being bought up big time around here.

  24. I just use a hoe to make a straight-ish row. The tiny seeds like lettuce I crouch down and sprinkle. The big seeds like beans I'm on hands and knees or crouching depending on how my knees are feeling lol. A couple years ago I bought one of these things that attaches to a drill. It's SO nice for planting tomatoes. Edited to add. I have a couple rows of beans planted but they aren't up yet. I'm waiting on more corn seed because the dang raccoons broke into my seed box in the garage and ate ALL THE CORN. Arrrrgh.
