    Wow. Last year's Independence Day seems like a million years ago. Times have certainly changed. Holidays now seem to turn into virus hotspots. I hope everyone stays safe, distances and wears a mask but still can enjoy the holiday. I don't know yet what we will have. I really want to make some type of fruit dessert but I don't know that I will get to a grocery store this week. I could go maybe before my periodontist appt that I am truly petrified of and dreading. Anyway. We have both some pork ribs and beef ribs. I think maybe two beef steaks in the freezer. I know we have hot dogs. I really want seafood like king crab legs or lobster, but that ain't happening this year lol. OH I do have a bag of frozen blueberries ....might do for my fruit fix. Smoked chicken sounds good too. I'll report back when I have a more solid plan lol.

    I really think he would like it. I've used sour cream, Laughing Cow cheese or shredded sharp cheddar. All are very good. I have been known to eat it cold for breakfast the next morning. But, I'm kinda weird.

    Bless your hearts Kim and Mr. Kim. I know this is a lot of work with the added stress of Covid. Take care of yourselves, too, and get plenty of rest. You're doing such good!
  8. The mangoes that I got were called Honey Mangoes. I have no idea where they are from though. I was very nervous because they showed shipping last Monday and I didn't get them until yesterday (Fedex). I was glad to see that they were still ok and not over ripe or smashed. I'd really like to find some around here but I bet I couldn't. Possibly the Asian market in the big city??? I have been really wanting to go there but haven't because of Covid and only going places that I absolutely need to.

    I highly recommend that recipe. Very refreshing . Yeah it's hot now. Low's in the high 70's highs near 100. Yes, squash from the garden--dunno how much longer though...the damn squash bugs are back and they already killed one squash overnight. Sigh. Yes, the unpeeled tomatoes. A travesty...but they really shouldn't even be called tomatoes as tasteless as they are (store bought). I guess I put them in for color lol.

  11. Host's note: this post, and the ensuing conversation, were moved from the How do you Eat/Peel/Open a Mango? topic. I've never had a mango before (to the best of my knowledge). After seeing several posts lately and thinking that they looked really good ( @liuzhou had one for breakfast a while back) I decided to splurge and order 3 from Harry and David online (I joined a monthly club for a few months). I had to google how to cut one up and I'm sure I butchered it but OH MY what have I been missing out on all these years???? Sweet...kind of like a cross between a cantaloupe and a peach...juice dripping down my arms. I'm sad I only have two more!

    Been wanting to try Wylie Dufresne's Scrambled Egg Sandwich ever since @liamsaunt and @blue_dolphin mentioned it in the breakfast topic. So last night was the night . It is a very filling sandwich...very good. To go with I made my usual tomato/olive/caper salad, fried red potatoes from the garden, crawfish boudin and @Jaymessquash.

    Oh I need to make some of that salad dressing from Norm now. Looks really good. LOL yeah, I did them in the CSO. I'm too lazy to unload the oven except for when I make pizza. I kind of followed this method but did it at a little less time each time. The bbq sauce got nice and sticky like you like

    Oven baked BBQ chicken, ranch pasta salad and corn--used some country ham that Ronnie cooked for the bacon bits. Really good.
  18. We had a lone carrot come up in the back garden--we let it go to seed...maybe there will be a lot of carrots next year. I think it's really pretty. Does anyone know what this is? It came up voluntarily....I can't remember ever planting anything that looks like this. It kind of reminds me of an eggplant, but the flowers aren't quite right..and they are white, not purple. Been digging lots of taters

  20. Scout decided a couple months ago that she and I must get up around 5:30 or 6 every morning and play endless amounts of ball outside. So, I roll out of bed, wad my hair up on top of my head and comply. I'm going to need rotator cuff surgery soon lol. Anyway, after about an hour of ball we trundle down to the garden and she rests 🙄 while I weed etc. Took a few pictures this morning.... We planted these tomatoes several weeks after the others.

  23. Quoting myself. I decided to go to the big city store this morning. Got there around 8:30. Not many people. Most in masks except for some young people probably in their 20's. Not expecting to find a thing, I went down the cleaning isles.... O M G they had 3 packs of Clorox Wipes. $9.99 like they always were. I almost cried right there in the isle. They didn't have very many--I noticed most people had a 3 pack in their carts. Bet they are sold out by now. They had lots of single containers too. So I came home with a total of 4 containers. I'm giddy with excitement. Who knew I could be so excited by wipes lol. Also scored some Clorox toilet bowl cleaner. Over all the store was stocked way more normally like it used to be. I noticed they opened the olive and salad bars. Bad move IMO. I certainly won't be partaking. I'm off to stare at my wipes. Might sleep with them tonight.
  24. I'm also doing a little mini stock-up. I'm running low on things like brown sugar, powdered sugar and baking powder. Also over the counter meds such as Immodium ad (yeah....stress makes me...well, you know). And pet food. My thinking is that it might be hard to find since so many shut downs of meat processing plants? Trying to decide whether to go into a store or whether to order. I'm sure it's cheaper to go into a store. I'm going to be making homemade Clorox wipes soon. I really thought by the time I ran out that they would be back in stock, but nope. And believe me, I've rationed what I had. Many places I've had to go do not have wipes at the door for their carts so I have to bring my own. I have a periodontist appt very soon. Terrified. Trying to decide whether to cancel, or go and get it done...I lean towards going because I think things are going to get worse before they get better. So many around here that I've seen on the news seem to have forgotten about the virus. Ronnie says he thinks it's safer to go there than get a haircut....sigh. Lets not talk about how awful my hair looks. Not so much the style, but oh do I need color badly. I need to clean my house so bad....you'd think I'd be motivated but all I want to do is be outside for some reason. Probably because my house is so bad lol.

    I got a plug-in keyboard for my MacBook...temporary work around for the keys that aren't working. I've done everything I could find online and it still hasn't helped. I know it's not a software problem because once in a while the keys randomly work. Frustrating. But at least this little keyboard works. Holy crap I looked online and new computers are SUPER expensive. Anyway. On to the food. Sous vide fried chicken with tater salad using red potatoes from the garden and the first squash. Then last night was pork enchiladas.
