    Dinner 2020

This is the recipe I go off of. I don't deviate on the dressing part, but the salad part I do. I add grilled chicken. I omit some veggies that I usually don't have.....like last night I didn't have radish or green pepper. When I remember (which I didn't last night) I add the toasted pita to the individual plates instead of to the whole salad (unless you're going to eat the whole salad that night). The pita gets squishy if you have leftovers. Still edible, but not as good.
  2. I missed her posts greatly..... Damn virus.
  3. I mentioned on another thread that we had a little mix-up seed wise in the greenhouse. What we thought were cucumber seeds were actually cantaloupe. Soooooo, instead of a glut of cukes that I was going to pickle, we have like a zillion melons. Picked the first one this morning. I will do the usual googling and searching but I also want to pick your brains. Maybe think outside the box. More than ever I don't want to waste anything. Recipes, ways to preserve....pressure canning???? Just anything. Or, last resort, the raccoons have major feasts every night lol.

I only make this grilled chicken fattoush salad this time of year with our cucumbers, onions and tomatoes from the garden. It's one of my favorite things to eat...probably because I only do it once or twice a summer. To go with, a vegetable soup made entirely from the garden. Ever since I got the Deep Run Roots cookbook, I make corn broth out of the sweet corn cobs after putting the kernels up in the freezer. That's the broth I used last night. Very light and summery, even though it was soup.

I want to be @liamsaunt for a bit--wanna trade bodies? Kansas is super fun lol. Seriously, your rolls look so good. I had to go to dreaded Walmart today and I actually looked in the frozen seafood section for scallops...I know, I know...but I'm craving them badly. There were none to be had. @mgaretz good luck with your oral surgery. Trust me, I know what you're going through. Shrimp Alfredo a couple nights ago. I'm getting lazy again. I should have made the pasta from scratch. Ronnie went fishing at the lake again yesterday and caught some lovely catfish (left) and white bass (right) Can't pass up fresh fish for dinner' I vac packed the rest of the catfish and took it over to my cleaning angel/friend (socially distanced across her yard of course). In return she had this beautiful bouquet of flowers from her garden for me

LOL! I really shouldn't be eating wings at all. I have stitches in my mouth. Honestly, eating that one wing took me almost as long as eating a whole chicken.

Garden sweet corn, hot wings and kind of a Greek salad. I don't have any feta cheese so I subbed parm.

Ohhhhh that looks so wonderful! And the tuna. I so wish Ronnie liked sushi.... I think the combo you did sounds like the perfect summer meal. I'm so glad you tried it 🤣 I love that movie
  16. Ohhhh yeah! Sigh I paid 69 cents a lemon last time. I use quite a bit of citrus with cooking and Ronnie likes limes and or lemons in his water and evening cocktail.
  17. I am super devastated that you had to buy squash lol. I'd gladly give you 20 or 30. But so glad you liked it! I've done it with all different types of cheese (not blue cheese) and have loved it every time.
  18. I'm so glad they liked it!! I've made it at least 3 times this summer.
  19. *scratching @Kim Shook off of the "leave zucchini on the porch" list* Hell, she even grates it up for you!
  20. Had to do something about the squash. It was overtaking the kitchen. Gave some to friends and the in laws. Well...I should say we left it hanging on their mailboxes in bags. Who knows if they want it or not 🤣. Then I got the dehydrator out and I'm drying some to vac pack and use over the winter. Today I'll make a batch of spag. sauce. I always think I'm making headway until I pick the garden and come in the house with more than I used up the day before lol.
  21. Unless the raccoons cart them off it looks to be a good year for watermelons and cantaloupes. I'll probably be starting a cantaloupe topic soon. Ronnie thought he was planting cucumber seeds and they were actually cantaloupes. We have a lot of plants lol. Picked anther batch of sweet corn. This wasn't as high quality as the last, but it'll still eat.
  22. I just pre-ordered too. Maybe they will release it earlier. I can't wait!
  23. A new book!!!!!! Oh you've just made my day. I can't wait! And your grits look excellent too
