  1. ...I was hoping the vids would show the pea butter being made.
  2. What exactly is the function of that ingredient in these recipes?
  3. Have you worked with a first time owner who spends their time in the kitchen with you?
  4. I've never seen Valrhona that cheap in the UK!
  5. I have an entirely heterosexual man crush on Laiskonis! ....he'd always mail back no matter how bad my questions from his blogs. seems like a great fella. is there more coming about his use of the Eztemper?
  6. I've got a couple of the first model too. Not sure of the form factor of this unit. Don't like the power cord at the front stretching back to the socket, anyone else?
  7. Anyone any idea what Sansaire was supposed to release yesterday on Kickstarter? 2nd model Sansaire or something entirely new?
  8. Been a couple of times after The Stanislavsky & Bolshoi and really rated Zhivago's on the corner of the hotel you stayed in. because of the collapse in the price of oil and sanctions & counter sanctions on EU food due to their military adventurism in their closest neighbours; many Russian chefs and restaurants have had to go back to refining Russian classics rather than apeing generic international cuisines. (I once saw in Kazan many menus in Russian composed entirely of well worn int'l classics ...scallops with Cauliflower puree, Nobu's Black Cod, a Ramsey Beef Weelington with Robuchon's pomme puree.... Sticky Toffee Pudding etc, etc, you wouldn't know you where in Tartarstan except for the bracing blast of the Kazanka & Volga rivers). Zhivago's for me, is the best example of this newly refound confidence... http://www.drzhivago.ru/en/gallery/91-food-2 I even like Moo-Moo https://en.m.wikipedia.org/wiki/Moo_Moo_Restaurant
  9. did you recombine the distillate and the reduction? ...Dave Arnold insists that chillies have a fantastic floral flavour with out the heat. (I tried to buy an ex-display Buchi in the UK, but they wouldn't let me once I'd stupidly admitted food use)
  10. Any chance of a photo of the whole rig?
  11. keep it coming Sparren!! am very interested!
  12. I know this is bad form to post after your own post.. However... looking at the shipping of the new BDX cube & the Searzall replacement screens, I get the impression that this centrifuge will only be available in the US and not at 240V.
  13. this is an update on the BDX500 Culinary Centrifuge sign up for an email. (found it by sniffing around ) http://www.bookeranddax.com/centrifuge
  14. I have no experience using them but have wondered like you over & over again.... but strictly on a fiscal front there's supposed to be a lower priced kitchen consumer 'fuge sometime this year by Dave Arnold (although it seems to have gone quiet on that front). And once you've factored in everything for a rotavap even used they are super expensive. I've looked on equipnet for bargains.
  15. ................How about a little chat about ברוך שפינוזה over dinner?
  16. I hope Sansaire has a smaller circulator in the pipeline. If not a Joules in Black might be tempting.
  17. how did you make the Turkey leg ballotine?
  18. I own multiple Sansaires and I just wish the footprint was the size of this new Joule. The Sansaires will look as old as video tapes in comparison to thumb drives. ...............still no sign of a whizz-bang chamber vac-pack, homogeniser or rotovap. although Dave Arnold's 500ml 'fuge is on the way.
  19. So it's a year since people were spending small fortunes on the Searzall via eBay. after a year are those who bought them still using them or have they migrated into cupboards and draws?
  20. so Dave finally admitted to the listening public that you're all right and a 'fuge is in preparation. I for one would like to see at least 220V, 1Litre capacity, 4000rpm and refrigeration... ....is this plausible? (I'd also like to see the Searzall replacement screens shipped worldwide!)
  21. I know that Kerry has answered me but I can't find it anywhere.... so I still want a compressor for chocolate... is 'oil free' the same as 'maintenance free'? and am I avoiding piston based compressors?
  22. has any one tried a searzall and a steel bowl?
  23. He's always recommending refridgerated with a min 4000rpm in swing buckets. There was an old Jouan unit that did that and had a 1200ml capacity. Which would be perfect for home use. They were expensive new though. And he's ruled out kickstarter, hasn't he..........?
  24. so you recommending them as a worthwhile investment?
