    Brining Chicken

    MC has a phosphate brine, but can't track down the ingredients unless I buy 25kg bags. Has anyone played with this?
  4. Yeah I tried to track down Wondra in Europe a few years back, as it's used in Michel Rollands 'Happy in The Kitchen'. Perhaps MC@US Home is closer.

    I know the cheeks on the Halibut head are something to behold, but it looks like there's ALOT of meat elsewhere on it? What about the 'salty sacks of magic', they taste 'halibut-y'?

  8. Amazon.co.uk have told me twice it will never be carried by them again, just return and look elsewhere. So when miraculously it came back into stock today I emailed them and asked for my duplicate copy. To which they replied that if they sent out another it'd just get beaten up again, so they aren't going to bother sending me one!!!! the missive ended "Did I solve your problem?" I let forth a frail bark of mirth.

  10. I remember the delicacy of slowly unpackaging the precious cargo of the orginal MC, And eventually thinking that the numerous boxes was over kill, even with the acrylic case. Now all I've got is crumpled origami.
  11. Just got mine and it's totally screwed. looks like someone has put it through a washing machine. Amazon.co.uk will give me a refund but not a new book, because they are out of stock. Waste of time & money, what a needless disappointment.
