  1. I have been away so long...was slowly coming back to "life" myself ..., was notified of this sad news. I am just so sorry to hear it. I know this is very late but felt the need to express how sad I am, at this new for me news.
  2. I was taught by a Cambodian friend to slice the thin and use them raw as crackers for a sardine spread made with chiles, garlic and lime I just eat the sliced but they go great in SE Asian curry type dishes
  3. My son brought me a brand new in the box Tiger SMJ-A18U 10-Cup (Uncooked) Rice Cake Maker, ( retail $250-300) seven bucks! Super score the thing works, like new because it is new! I like mochi but, have grandkids who totally adore this kind of thing! All the yogurt shops have flavored mochi toppings now I hear? ..I thought about egullet? ..missed you guys and back I am to figure out, other than the traditional types, what else we can do with this machine, mochi and sticky rice. I have the little kids a lot this summer so I wanted have as much fun possible mochi is FUN! I can plug it in outside and hose them off or just send them home after I am searching topics now..sadly not much! If anyone can direct me?

  5. I visit SE Florida a lot and haven't eaten well there in ages .. All my old Caribbean haunts are gone, the Cuban places are all but a few and fish? Where??? Breadfruit? I see trees heavy with fruit but none for sale? My budget is limited but I am interested in eating well on a budget Help me find food in SE Florida? where do we eat in the Keys? I have access to a beautiful kitchen so I can cook. Thank you for any ideas and help. I couldn't find a decent patty my last trip? , also the Middle Eastern bakeries? Are they gone?

  9. wow no one answered your question I am so sorry! ...the timing on the cakes has to do not only with the temp but the type of cake you want ..some are low and slow kind of give you a steamed cake (if you cover it with foil it turns out like a plum pudding ...and some are a little more cake like I am happy to say ...I am going to make a cake this week I have it "in" me again ..thanks GFRON1, ABRA LINDACAKES CHEF...ALL OF YOU!!! who made this thread a really nice one..I am so glad I looked back! things have changed places and people change ... I am not myself yet but much much better ..acceptence is finding its way back into my life ... my black cake this year has several advantages ..the first being emotions and desire to do making the best cake ever!!! ...second the age and quality of my fruits ...the rough edges are gone and they are so mellow and wonderful third I have a very good source for the best of while spices and my own fresh ginger I have a plan and it begins this week anyone else thinking of starting fruits now? I will be back when I see my black cake lovin friends again GFRON1 make one

    Beef liver

    I am going to cook the hearts thin sliced Korean marinade and grilled the feet I use either for Caribbean cow foot soup (or my spoiled brat dogs get them) also the tails are for soup no tripe I wanted it ..I love it ...but when I saw it fresh from a slaughtered animal I instantly changed my mind (I am tough but not that tough!) I will buy it prebleached or whatever is done to it at the butcher so I do not have to deal with the smell and cleaning it ..tripe in its pure form is not at all like the nice clean stuff in the markets that is for sure! thanks for the advice I will try the suggestions since I have a ton of it I can try it until I get it right ..I had soaked it in yogurt but next time I will try the milk I thought maybe I had cut it wrong but then realized a lobe is a lobe and there does not seem to be a "direction" to it! I tried raw liver one time with a hot sauce shot .. but it was after some beers and really after some beers I could not really tell if I liked it or not!

    we just had a beautiful well loved ..grassfed steer butchered and it is hanging aging to perfection ...we have the single the best butcher in the northwest I swear! Just a hint ..if you are willing to go to the butcherings (and I do not want anyone butchering with out me there to be honest ..then I know it was humanely killed and everything is done in a clean manner) they give you what you want from not just your animal ..but rather than waste "unwanted" parts from the other animals being butchered as well) ..you can take all you can haul with you for no charge! With things like liver, heart, tails and feet going for crazy high prices now ..it is so worth it to go and get it yourself ..free! this butcher is so good he actually choose the best livers, the best hearts for me out of all the animals he butchered that day! We ended up with buckets of feet, hearts, livers and best of all for me are my favorite those yummy tails! I myself pretty much eat anything if it is well prepared and fresh.. but liver is not one of my favorites ...I keep trying however! ....and last night curiosity got the best of me and I thinly sliced and pan fried until med rare a nice piece in some butter with fresh sage leaves the flavor of fresh grassfed beef liver is out of this world ..however the texture was really not good ..my husband and I both ate it agreed on the wonderful flavor ...but wondered what we could do with the liver to enjoy this flavor and not have to deal with that strange texture ..it is like eating mini bubble wrap ..it kind of pops in your mouth when you chew it normally I am intrigued by unique food texture but this is not appealing at all to either one of us ..but that flavor ...the flavor is clean fresh and really good ..too good to overlook here and not try again! so please I need recipes ..perhaps a differing cooking technique for beef liver? I plan to make some liverwurst/pate and liver dumplings (when I say I have a lot of liver I am not kidding have you ever seen an entire steer liver? I have four of those suckers sliced up n the freezer now ..even sharing with the dogs there is still a ton for us to enjoy!) ... but that kind of prep looses the flavor of the actual meat once you grind it and mix in the spices I never in my life thought I would say "I love liver" ..and I dont just yet ...but I did love the flavor! A LOT! I think if I could get the texture thing more agreeable I could say it however!!! so thank you in advance I am looking forward to your answers

  13. after about a year of (hand crank) roasting his own coffee ...with a whirlypop on the stove my husband is out in his shop making the whirlypop go buy itself! I will keep you posted on how this goes we just purchased some great coffee from Seven Bridges Coop rabid delivery and as good as but a little cheaper for what we wanted than Sweet Marias ..they are about equal buy us to be honest the way we brew when we really want to enjoy home roasted coffee is to mix a med and dark roast half and half then making it a moka pot so freaking good I would have never known about it if was not from another member her so thanks it has been fun but now that HE is in the shop with the serious look and all the tools sick turning that crank but not willing to give up home roasted coffee
  14. I just want to say I am going to make this for tomrrow's dinner so please insert very sincere yet very silly happy dance here! It always happens ..I am sitting here thinking to myself "hmmmmm...what should I make today? I want something really good! " and this board is like The Magic 8 ball, close my eyes make a wish for some inspiration ....turn it over and there is the answer! I have not made Ma Pu tofu in ages! This is such suck your thumb twirl your hair good comfort food I think! Certainly rolling through this thread again has me so stoked i want to make it for breakfast and it is not even light out! thank you! eta change of menu!

  16. an entire pot of home roast starting at 3am ..seriously and with an ulcer that is just freaking awesome huh? oh well somethings I have to live with... it is not so bad and I am heading out now for a few hours. We will see how hardy I really am in a few min here! the sun is really poking through and maybe I can put some straw on the beds to warm them up besides the peas, carrots and radishes will just sit dorment I bet dont you think? I am sorry you had health problems I hope all is well now my neighbor! March is right around the corner I will look forward to your posts I can not find anyone who will mail order less than 24 chickens so we are going out to the feed stores later today and just look around and talk to people My husband insists we do Rhode Island reds this time he says "how can you not you are a Rhode Island Red!!!" silly man but I am going to get what he wants I am just excited he wants to build a tractor for them ok time to brave the mud and cold
  17. HAPPY VD!!! This is the weekend for the first official wave of planting in the garden! Does anyone else do peas on President's Day? or did I make this up? I have been doing it for so long I can not remember if it was a well known tradition or not? today I plant the first (official) round of sugar snap peas, carrots, and radishes (I don't count the ones I planted last month because it was an impulse move and I am not sure they will come up!) Everyone seems to think I have lost my mind wanting to garden in the winter ..but we go through this all the time! Every year they say "your nuts" and every year I say "this is a well established fact I lost my mind a long time ago!" but because of gardening and cooking I am a very functional crazy woman! With the tremendous amount of therapy gained from cooking and gardening..(ok I confess there is the lunar need for a Xanax but that is another topic completely) Since it snowed like crazy here and there is still some on the ground I got the looks and comments again at dinner with friends last night when I said "I want to get to bed early so I can garden at the crack of dawn" I opted out of telling them of my plans for a CHICKEN TRACTORS CLICK HERE Don't suppose anyone has a chicken tractor? if so want to share advice? also Anyone here raise chickens ?Maybe can tell me about mail order sources I found some places but am not sure who is good and who isnt? Locally I can buy some but after looking around I can get exactly the number of female ARAUCANA CLICK I have had them before and they are fun, easy to raise, productive and the eggs are really very good! I may have mentioned in my previous post that for an early Valentine my husband helped me put together six more raised bets, (he likes me better when I am tired and content) Next week I need to find a truck to haul the good shit (soil) from up north I am going to try really hard to organize things this year and follow the guidelines of THE SQUARE FOOT GARDEN CLICK I used to love PBS when it showed a lot of Victory Garden/Square Foot Garden all kinds of gardens garden shows and I a miss them what the heck happened? I only find the odd show like that anymore This is a good plan I think because I want a little bit of a lotta bit! and to get that if I divide the boxes into square foot plots I can do that and rotate things more easily! So yesterday I was in a funk (I have an ulcer of all things and it is depressing me) so I cheered myself up by ordering lots of seeds and a few dahlia bulbs. this is the first time I have tried this company but have heard good things SUPERSEEDS CLICK HERE they beat the crap out of the prices of other places for the same stuff, a third the price of Territorial Seeds had a tremendous selection and the shipping was not bad either. So fingers crossed! Have any of you tried them? I have heard they are good! Well I am running out of words and coffee and the sun is still not up thanks for letting me ramble hope someone else is gardening now? or thinking about it? or wanting to talk about it?
  18. I eat low carb and heavy cream with butter and cheddar is wonderful on vegetables just add some stock maybe if you think it is too rich?
  19. I am short I hated it and my shirt caught on fire so I would give up the microwave before I would do that again but again I am short so it was totally not workable
  20. practice, love of cooking, sense of adventure, willingness to trash a kitchen ...and most of all (my biggest reward) just getting to the point where when they are done eating your labor of love everyone curls up goes fetal sucking thumbs and twirls hair. when I had accomplished that I knew I had arrived as a great home cook

It is "low carb" but I also think calories are valid... her recipes are wonderful they are not really complex but way above the average so you can really eat well and loose weight I will not go into my history here but it is a history and I adore food will not compromise my tastes and enjoy cooking she does too
  22. my baking in general is not as good as anyone elses baking in general in general I suck at baking it is ok since I get fat when I eat baked goods but it is a skill I have always wanted to acheive! I always thought if I were given an Rx for ritalin just to bake I could do it. Everything I do in the kitchen that is wonderful is impulsive and I can not seem to turn that off when it comes to baking..I waste a lot of food when I bake... if I took a pill for impulse control maybe I could bake!
  23. OH YOU GUYS I LOVE YOU I LOVE THIS THREAD AND I LOVE THE FACT IT IS ALWAYS HERE WHEN I NEED IT HUGS ALL AROUND!!! I survived another month and hit my crescendo a couple of days ago with a supper of a huge rib eye BLOOD RARE with a sugar free coconut brownie and a diet Coke I made it with out one bit of sugar YAY YAY YAY although I was following my friend around drooling one day while she ate cake I really thought at one point I was going to trip her on purpose and do a face plant in her plate (I could see the vision of the whole thing in my brain) and my husband is still intact AND I only had one Xanax!!!! phew see you in 28 days
