Addiction to Diet Sodas - How Bad Are They
chileheadmike replied to a topic in Food Traditions & Culture
I have an anti-sweet tooth. No soda pop for me. I drink unsweetened tea all day. Sometimes it's a challenge to get unsweetened tea here, and if you don't specify, you get something approaching pancake syrup. The only exception is a Jarritos orange at my local taqueria a couple times a year. -
I bought some at Krogers over the weekend. Roasted in the Ninja Foodi and then peeled. They will be going into green chile cheeseburgers. I did see a case of them, the label on the case said, "Hot House Grown". I bought them anyway and they smelled delicious when I roasted them, not sure why they would need a hot house if they are gown in New Mexico.

Oops, before. I need more caffeine.

I did.

My wife is a nurse at one of the local hospitals. I was attempting to get dinner ready before she had to leave, but of course I was running late. Took the chicken off the the smoker and finished it in a hot sauté pan, seared some pre-cooked Yukon gold potatoes in the same pan, and did a piece of corn on the cob for 3 minutes in the IP. All came out fine and she left for work on time. Corn came out really, really good.

I'm probably late on this but here goes anyway. My Mom's family is from Dresden, she has a bunch of Hummels from before the war. There was an earlier thread on which recipe you you will be remembered for. She will definitely be remembered for her German potato salad. She says she got it from her aunt and that made it sound like the only potato salad ever served in Germany. Every time I've had it other than hers, it's been in a sweet syrupy dressing. I really don't care for that. Her recipe is below: 5 pounds russet potatoes, boiled then pealed and diced. 1 dozen eggs, hard boiled and diced 1 white onion (when I was young, getting an onion was a big deal. I only remember having one when Mom was making GPS. Dad would dice it, his only ever kitchen job.) 1 pound bacon, diced and cooked crisp Apple Cider Vinegar. Probably 1/3 cup not sure why she never measured this, every other recipe she cooked, she measured everything. Salt and lots of pepper. The bacon was cooked until crisp, then add the diced onion. When it was translucent, add the vinegar and turn off the heat. Mix, serve. Still one of my favorite thing ever.

Heirloom Beans by Rancho Gordo (Steve_Sando)
chileheadmike replied to a topic in Cookbooks & References
I just finished off a pound of Alubia blanco. Most were done for barbecued beans and some was for a puree with olive oil, garlic, rosemary and lemon juice. Both were outstanding. I still have another pound of them. I think I've tried the midnight black beans. Everything I've ordered from him has been really, really good. I don't think they have grown/packaging dates on the package, but freshness has never been an issue. -
What recipe do you want to be remembered for?

For me, it will probably be the Saturday morning pancakes for a bunch of screaming girls after a sleepover. Good times. -
Looks like a pork blade steak to me. From the shoulder.

That crawfish seems to like them. Maybe they would make good crawfish bait.

This is going to be a good thread.

I bought some Alubia Blanca in my last purchase. Boiled them with just onion and garlic. Reserved half for barbecued beans. For the other half, I sautéed onion and garlic in a little olive oil. Added beans, chopped parsley, rosemary, lemon juice and a little lemon zest with some salt and a more olive oil into the food processor. Served with crostini and veggies. Pretty good. -
Probably got into some raw vegetables. Fun story, thanks for sharing.

Well, yeah. But definitely horse country. -

Sunny and warm here today. Exceptional weather for a horse race and associated activities. It's usually raining on the 1st weekend in May. I had not planned in advance, but if I find some mint I'll have to make a MJ. Mint gets very scarce this time of year. Woodford Reserve is about 20 minutes from my house. Toured it several times with visiting friends and relatives. Beautiful drive out there through horse country. -

I should start planning something. I turn 60 on May 5 this year. I may have to do the celebration on Saturday when I'll have time to cook. There's some horse race thingie here that weekend also.

I've always heard it pronounced CRAW-pee. One of my favorite fish. And a lot of fun to catch if you get into a school of them. Shelby's look delicious.

I put a little in my pasta water. Helps to keep it from boiling over.

Serve over rice.

Looks great, I make these when my kids are over. I put the sliced bananas on the griddle 1st then add the batter. Seems to work well either way, though.
