  1. So, I'm pretty tall and at just about burner height, uhm, yeah. Pass.
  2. Great looking brisket.
  3. I made a batch of buffalo wings in the Ninja Foodi during half time. They came out pretty good. Crisp and still juicy and no real cleanup. I'm starting to like that thing. So I missed most of the halftime show.
  4. Gotta gloat. NFL Superbowl Champion Kansas City Chiefs.
  5. When I lived within range of the radio broadcast, I always turned the teevee sound down and piped the radio feed through the surround sound. The local guys were as biased as me. Doesn't seem to work as well streaming over the internet.
  6. Got email from them yesterday. Royal Corona are back in stock. Really good beans.
  7. My wife decided she was going to understand football. She sat down with me for about 20 minutes during a game earlier this season. She wanted to know what a down was, what 1 and 10 meant. What's a touchown, extra point and why do they kick the ball. I explain it all and she kind of, sort of gets it. A couple weeks later we were talking to friends. She exclaims proudly that she knows everything about football. I don't think she's watched play since. She's got it.
  8. I'm a lifelong Chiefs fan. I grew up in Kansas just outside of Kansas City. I remember watching the last time the Chiefs were in the SB with my dad. It's been a lot of disappointment since then. Hate the Broncos, I like Shelby a little less now (nah, how could anyone?) No one here seems very interested in a SB party. It's late on a Sunday night and no one wants to go out. My wife hates all sports. It will just be me in my man room with the TV and surround. Kinda sad. I would love to do a brisket on the smoker, but with just my wife and I here, it would take a month to eat it all. I'll probably do some ribs and mac n cheese and collard greens. Depends on what I find in the stores.
  9. I was in polite company so I refrained. Atomic buffalo turds. Here is a picture of some ready to go on.
  10. We used to do them by the hundreds for barbecue competitions. They were always know as ABTs. Cut the chile in half lengthwise and scoop out the seeds and pithy stuff. Fill with cream cheese and top with a little smokie and then wrap with a half slice of bacon a 1/3 slice if it is stretch-y. Secure with a toothpick. Put them on the smoker for a couple of hours. I have used my Weber kettle with indirect heat for 30 to 40 minutes with good results as well. It's hotter than a smoker and crisps the bacon more. A teammate once brought a turkey fryer to a competition, we ended up dipping the already smoked ABTs in beer batter and fried them. Pretty good stuff.
  11. I start my chicken stock with a box of Swanson's chicken broth. It may be overkill but it seems to work well. I use Better Than Bouillon as an enhancement for roast beef gravy.
  12. The one time I made my own vanilla extract, I didn't even try it until it had sat for 6 months.
  13. I use a $15 hot air popcorn popper. Works pretty well.
  14. I would not serve it to others, especially no one expecting. I might cook it for myself though, thinking I now have some immunity for that virus.
  15. It probably released some water/juice from the escargot.
  16. We just installed a Whirlpool that I am happy with. It's only a couple of months old so I can't comment on longevity. Seems to do a good job and has one feature I really like. The beeper indicating that the cycle is done shuts off as soon as you open the door.

    Dinner 2020

Lamb looks great. Here's to a full and speedy recovery.
  18. Are you using the same pot every time? Maybe a reaction from that. I use the water from re-hydrating chiles to thin the paste all the time with no bitterness.
  19. It's been several decades since I've been in a restaurant kitchen, but a lot of recipes called for a full sheet.
  20. Full sheet pans don't fit in small ovens.
  21. "What was your family food culture when you were growing up? My mom has always said that she could cook, she just didn't want to. There was lots of spaghetti with sauce from a jar. Always served with cinnamon raisin bread. Occasionally, she would make tacos for the extended family. Ground beef, shredded lettuce, tomatoes (in the summer from dad's garden). She fried the taco shells in a skillet but quit doing that when it popped and she got a pretty bad facial burn. Christmas eve was the big holiday. My uncle barbecued a brisket and made barbecued beans. Mom made German potato salad. The GPS was served at 4th of July as well. The only two times a year it was made. Some Swanson frozen dinners. An occasional round steak cooked extra super well done. Was meal time important? Yeah, we ate dinner as a family every night. Was cooking important? Nope. What were the penalties for putting elbows on the table? We were told not to do this. Who cooked in the family? Mom. Dad cooked once when mom was in the hospital. Spaghetti noodles with chili on top. My brother and I made fun of him until he got seriously mad. We were just having fun, but he was probably worried about mom. 10+ years later, I was watching Jeff Smith with him and JS made Cincinnati chili. Dad gave every bit of the grief I gave him back to me. Were restaurant meals common, or for special occasions? Very rare. Did children have a "kiddy table" when guests were over? Our house was pretty small, when we went to someone else's house there was a kiddie table. When did you get that first sip of wine? I must have been 13 or so. I begged my dad for some wine on NYE. I think he got tired of hearing about it and bought a bottle of Boon's Farm. I had 1/4 of a glass and hated it. I threw up in church the next morning and that was the end of my parental sanctioned underage drinking. Was there a pre-meal prayer? Always. Catholic. Bless us O Lord.... Was there a rotating menu (e.g., meatloaf every Thursday)? Mom usually made a roast on Sunday. How much of your family culture is being replicated in your present-day family life? German potato salad on Christmas Eve and July 4 lives on. ETA: My mom grew up in an orphanage as well. Her mom died when she was 4. My grandfather worked for the railroad and took the kids (3) when he could, but they spent most of the 1930's in an orphanage.
  22. No cooking for me tonight. I spent a good hour and a half at the gym. Then football on the teevee. I posted the following on my favorite sports bored. I've been home most of the night. Listened to the greatest rock and roll band of all time covering Dylan tunes. When I Paint My Masterpiece; Stuck Inside of Mobile with them Memphis Blues Again; Desolation Row; Visions of Johanna. Yeah, that was a good hour and a half of music.
  23. Our local Kroger has St Patrick's Day stuff out.
  24. Amazing stuff, thanks for sharing. It's been several years ago that I visited my best buddy in Seattle. He drove us out to the Olympic Peninsula and we hiked in the Hoh Rain Forest. Scenes very similar to your pictures. They brought back some good memories.
  25. Actually, they were fine. A thin layer that was off color but not green and not bad at all.
