Actually these in combination, any two or all three can make just about anything palatable.

I have many, many more condiments in the fridge and in the pantry, including about 3 types of mustard, but these are the things I turn to over and over again when I need to "help" some food or another.

Vinegary hot sauce (Tobasco or Louisiana Hot Sauce I guess)

Non-vinegary hot sauce (Melinda's, Yucatan Sunshine)

I play by the rules, so that's it, but I would miss pickapeppa, worcester, sriracha, and hoisin, among others.

I abstained only because I thought we were discussing condiments that came in jars, bottles, etc. If not, I'd have to put lemon juice at the top of my desert island condiment list.

I think it is Hellman's in the east and Best Foods in the west. I have only seen Hellman's "flavored" mayo at Big Lots and their stuff comes from God knows where.....

You have only three types of mustards? Geez, I must be weird because I have half a dozen types that are homemade - I have no idea how many I have that are store bought but there is a tray full in the pantry and a bunch in the fridge.

Of course I have to admit I am a bit of a nut about mustard in all its many forms.

My housekeeper is now laughing her head off. She says I need a separate fridge just for the condiments.

She laughs at me because I section off a bratwurst and put a different mustard on each section before covering it with the top of the bun.

I just like to get a different taste sensation with each bite, is that so awful??????

Interesting topic, but how can everyone answer so quickly ... are you all assuming that you have everything else on this island? I mean what have we got, are we in 'survivor' land with nothing but some fish we spear in the ocean or what?

Personally if I haven't got bread and some kind of meat or fowl, I don't need mayonaise, possibly not even mustard, but admitidly it goes with a much wider variety of foods.. If I haven't the means to get to any meat then I want a seperate set of condiments than if I do, etc.

So, I'm pondering. My first inclination goes closely with Hopkin, Blackberry jam (homemade, handpicked) mango chutney, and pepper jelly. But the lemon/lime issue is still open right?

note to hopkin, I'll come by with a jar of my pepper jelly for you, in hopes you will share your mango chutney recipe :wub:

If you think back to the reason some of these things were developed, it only makes sense.

Some were created to cover up the taste of spoiled or nearly spoiled food, only later were they used to enhance flavors.

I myself would prefer fowl rather than foul but to each his own. :wacko:

I just hope I would be allowed to bring some sort of firestarter, as an all-sushi diet would likely pall in time, regardless of condiments!

I can make fire without matches. Growing up on a farm has lots of advantages, especially when you have a bunch of boys, near in age with which to play and uncles and great uncles who love showing kids all kinds of woodslore.

I learned to make a firebow before I was 10. We used to go fishing a pretty long hike from home, start a fire early on and the first few fish we caught were plastered in clay (lots of clay in western Kentucky), put into the coals and by the time we had caught enough for dinner, our lunch was done. Crack open the clay and the skin comes off with it leaving the beautifully cooked flaky flesh ready to eat.

While few islands would have all the resources of the one found by

Yes, you're absolutely right...that's what I get for answering way late at night, I mess up cardinal directions :-).

I assume this is your good old, traditional desert island surrounded by ocean.

Probably would be eating a lot of clams and oysters, so numbers 1 and 2 would be ketchup and horseradish.

Don't know what else would be available for provender.

My guess is that there would be some vegetation to eat.

Would therefore probably pick vinegar, if that is considered fair game here. But then again I could make that.

OK, number three is Worcestershire sauce.

      I LOVE pickled ginger. In fact, in some instances, moreso than sushi or sashimi itself. When I was first introduced to sushi, it was my least favorite part of a sushi meal. Now it's the opposite.
      Besides sushi/sashimi, what other uses for pickled ginger are there? And how do you make your own? What goes in the pickling solution? Fresh pickled ginger (not premade) is undyed and a pale beige in color, whereas the premade version is a slight tawny pink.

      What sorts of mustards do you like? The type of mustard I like is pungent without a hint of sweetness (fie upon honey mustards), but not too vinegary. Inglehoffer's Stone Ground tends to be rather good, but it's got a little too much vinegar (overpowers the taste of the mustard). What sorts of mustards do you like? Any brands?       Sorta Secret Aardvark Sauce (Habenero Hot Sauce)
      I thought I'd submit my recipe which is a clone of a locally available sauce here in Portland OR called Secret Aardvark Sauce.
      Sorta Secret Aardvark Sauce
      1 – 14.5 oz can of diced tomatoes or roasted tomatoes chopped - include the juice
      1 – 14.5 oz of rice wine vinegar. Use the now empty tomato can to measure
      1-1/2 cups of peeled and grated carrots (packed into the measuring cup)
      1 cup of finely diced white onion
      1/4 cup of yellow mustard
      1/3 cup of sugar
      2 teaspoons of Morton’s Kosher Salt
      1 teaspoon of black pepper
      13 small Habaneros – seeded and membranes removed. (This was 2 oz. of Habaneros before cutting off the tops and removing the seeds and membranes)
      2 teaspoons curry powder
      1 cup of water when cooking
      5 or 6 cloves of garlic - roasted if you've got it
      Put it all in the crockpot on high until everything is tender. About 3 hours  Note: I used the crockpot so I don't have to worry about scorching it while it cooks. 
      Whirl in food processor – Don’t puree until smooth – make it lightly/finely chunky.
      Makes 3 pints - To can process pint jars in a water bath canner for 15 minutes
      I've thought about making this with peaches or mangoes too, but haven't tried it yet.

      Prawn Balchao is a very famous Goan pickle that has a sweet, spicy and tangy flavor to it. 
      For the balchao paste you will need:
      > 8-10 kashmiri red chillies
      > 4-5 Byadagi red chillies
      > 1/2 tsp cumin seeds
      > 1/2 tsk turmeric powder 
      > 1 tsp peppercorn
      > 6 garlic cloves
      > 1/2 tsp cloves
      > 1 inch cinnamon stick
      > Vinegar 
      First you will need to marinate about 250 grams of prawns in some turmeric powder and salt. After 15 minutes deep fry them in oil till them become golden n crisp. Set them aside and add tsp vinegar to them and let it sit for 1 hour. Now, make a paste of all the ingredients mentioned under the balchao paste and make sure not to add any water. In the same pan used for fryin the prawns, add in some chopped garlic and ginger. Lightly fry them and immediately add one whole chopped onion. Next, add the balchao paste amd let it cook for 2-3 minutes. Add in the prawns and cook until the gravy thickens. Finally add 1 tsp sugar and salt according to your taste. Allow it to cool. This can be stored in a glass jar. Let this mature for 1-3 weeks before its use. Make sure never to use water at any stage. This can be enjoyed with a simple lentil curry and rice.
