Making Cheese with The Romans – Columella’s Cheese

I've always been interested in ancient cooking and in particular, in the Romans. So I was delighted to run into this today.

 

I'm not saying I'm going to be dashing off to make and eat it, but maybe one day. Just reading it makes me smile.

 Very interesting.  Thank you.  I did know about the role of the  artichoke in making "rennet"  but the fig is definitely new to me.
