A regular meatloaf mix often consists of beef, pork, and veal.  But what about a poultry meatloaf, which is what I'd like to make some time soon.  I was thinking of dark meat turkey (thigh meat) duck breast or thigh, and perhaps chicken breast.  Does this seem reasonable?  What about adding other or different meats?  Any thoughts?

How about adding some bison or wild boar, or, for that matter, whatever other odds and ends of mince you happen to have? Also, a panade/some added fat, or it's going to be more like sawdust loaf.

 

Bison and wild boar sound interesting.  I don't have "odds and ends of mince" as I don't eat much meat, and usually only buy what I'm going to use when I do want meat.

I make turkey (only) meatloaf and keep it moist by adding cooked, finely chopped mushrooms and onions to the meat.

I have made turkey meatloaf as well as bison and turkey(dark meat). 

Moisture is important and I use panko soaked in milk, beaten egg and onion that I grate on a box grater getting finely shredded onion as well as the onion juice.  For the bison I also add Worcestershire sauce.  I have also made a panade with baby spinach, the panko, milk, egg and onion for the turkey.

The one thing I have learned for me is that I use an oversized fork to mix because my hands are too big and hot and using the fork keeps it light.

I have made turkey meatloaf a number of times.  One recipe I acquired somewhere has quinoa in it instead of bread - really delicious and moist.  Pretty much just a traditional meatloaf recipe with the cooked quinoa replacing the bread, and I just use regular packaged ground turkey.
