The discussion continues from here.] I've been searching for the post @Anna N made awhile back about the CSO tomato tart with the insufficiently caramelized onions. I think it was in this thread but I sure can't find it. I had half a thought to try the tart for dinner but I've never used frozen puff pastry dough sheets before. Maybe it's buried in a Manitoulin thread?

    My back is out. Dinner had to change horses in midstream. It was supposed to have been dry fried green beans. I soon realized, whatever else, I could not be standing at the stove. What finally transpired was baked potato, grilled rib lamb chops, and broccolini. Not a bad option, considering. Even so I couldn't lift the pot of water for the broccolini and had to pour some out. Dessert is a bottle of Rioja with chocolate from an elegant heart shaped mold that Kerry sent. Ibuprofen only does so much. What comes to mind is the last time I tried to make paella for company. I have an impractically large paella pan, not the nice new little one from Darto. I started off with about $100 of seafood and saffron. My guests were a woman in whom I had a romantic interest and her older son. Before they arrived I threw out my back and had to take to bed. My friend and my younger son were left to carry on the cooking. She remarked "This is just like cooking with my mother!" Dar Williams has a song lyric: "Whoever thought of love is no friend of mine."

    Thank you. I confess it is not pizza dough. It was the same batch of dough as this: Typically I bake bread once a week. I mix a kg of dough in my KitchenAid. Right after mixing I bag up about 180-200g of dough to retard a day or two for pizza. This works great as long as I don't go beyond two days. Much longer and the dough resembles silly putty and half the pie ends up on the oven floor.

    Another two and a half minute pizza... Aged mozzarella rather than fresh. In this application I think I prefer fresh, but the aged was perfectly OK. Once again fresh home grown basil from my dining room, not picked until the pie was on the rack. More than I could eat but I ate all of it anyway. Soave helped.

    I don't do breakfast but when I got up this morning only to find it was a snow day and I had no work I thought of Cream of Wheat. My Cream of Wheat seems to have expired in 2009. No matter, it tasted good to me.

    Not only was Whole Foods open -- they filled my Prime Now order perfectly and got it here on time in perfectly miserable weather. Everything I ordered was in stock. They are getting better. Pecker or no Pecker. If the weather ever clears enough for me to get to work I'll check out that WSJ article. And for what it's worth Boursin was $1.00 less expensive than from Shoprite.

    Some days I wish I had a larger butcher block* For a stand mixer Hamelman calls for 900-1000 revolutions. This was 30 seconds on speed 1 to stir and 3 and one half minutes on speed 4, 968 revolutions total. *Edit: I do of course, just not end grain walnut.

    @Franci I have a Magic Chef: http://amzn.com/B00IID3OZE Quite pleased with it. Of course what I got it for was chocolate. There are some bottles in there but they are for ballast.

    Actually I became aware of the filth issue quite a few years ago when I was researching ammoniacal Finnish licorice that a friend very kindly sent. I found the text of a US-Finnish chocolate treaty.

    I don't worry about my floor till it gets slippery. That being said I've tried scraping and it doesn't seem to help much. I suspect heat gun and paper towels are the way to go.

  18. I found I don't much care for rye in mixed drinks. But I do enjoy it neat. I confess I am not a Scotch drinker at all, as much as my son keeps tempting me.
  19. I have to ask, why so cheap? I am a poor pensioner and I'm sipping (indeed at the very moment) WhistlePig, single barrel, barrel strength. (Not that I do so every night or very much.) Why drink rotgut if you do not have to? Colonel Taylor bonded works for me as well. Disclaimer, I've never tasted Bulleit but I'm not about to now.

    I've been revisiting Nigel Slater's Tender, a favorite book of mine. It just struck me that in the pumpkin chapter Slater classifies pumpkin as a winter squash. I always thought that what we in North America, or at least in the civilized parts thereof, called pumpkin was a summer squash. But as we are blessed by eGulleters all over the globe, what is pumpkin? A summer or a winter squash? If I were a sober or a patient person I would google all of this. Unfortunately I am disqualified on at least two counts. So what is a pumpkin?

    My oven is a residential GE electric oven. I use the highest rack position, plus the aluminum adds another inch of height. Also I turn the broiler on a couple minutes before loading the pie.
