    4th of July

    Dinner 2019

    @Shelby Creamed Peas were one of my favorite things growing up I had to lean to make them myself as my mother always provided a home cooked dinner and a home cooked breakfast for my sister and I she would have preferred to dig around in her garden I might mention. she make meat sauce for spaghetti and added the cooked spaghetti to the sauce first and it was very tasty Id say may not so much on day 3 , being reheated in the oven covered in foil that has seen better days no problem : spaghetti w crunch ! bur creamed peas was onb of the first things I made in High School after learning about White Sauce never had it w baby potatoes ! a few Kudos your way Im sending.
  3. @robirdstx just now noting some of the details of your Pork Vindaloo in the iPot I note you use ' simmer sauce ' I tend to use only Patak's pastes Im guessing the pastes have more concentrated flavor. have you tried pastes and if so , what do you think ?

    Burger King

    a week or so ago the circular selection that comes via the P.O.Carrier had some fast food coupons. McD , and Burger King. I decided to try a Whopper ( or two ) the W tastes better , understanding the bar is low , than the BigMac due to the CharBroil. you can also add extra shrubbery is you like Whopper w extra tomato ( decent ) and pickles. one thing about the Whopper there seems to be a lot of Bun.

    On "Natural Wines"

    Id never take an ' old ' wine anywhere. stirs up the sediment. and the oldest wines Ive had were 22 y.o. zinfandels I aged myself kept them at home and drank them at home.

  12. on-the-vine are the best tomatoes I can get ' off-season' I mature them in a brown paper bag w a few apples in them. sometimes this helps , sometimes not. cherry tomatoes are nice , I used to grow super-swett 100 but they taste like cherry tomatoes , not regular tomatoes. and no tomato in the store taste like one you pic at home. even farmers market tomatoes , sometimes quite nice , are picked too early I don't blame the farmers , cash in the hand is better than cash on the bush.

    nothing can be done to GBB to make them remotely palatable. therefore : 1) throw them out 2) never buy them 3) remember to mention you are allergic to GBB in any restaurant that might serve them , esp Chinese
  14. im wondering if the bran , unless its well soaked , or autolysed , affects the gluten strands on the final rise. if you separated the bran , you could sprinkle it on the top before baking ?

  16. my PJ starter finally has some mold on the sides and has been retired. Ill try again as soon as I get some more PJ. I like the look of that bread ! how did it taste re heritage vs commercial grain ? did you remove the bran ? do an autolysis ?
  17. well, it must have been something I ate . I had a coupon for BigMac';s so yesterday I had two. in contrast to the 1/4 lb'r the BigMac's were ' tastier' I thought about it : they look more interesting and there was a definite sweetness to them, sort of sweet and sour. maybe the Special Sauce and we know how addicting Commercial levels of sugar are. McD also knows .
  18. @HungryChris Im not a fan of BB. probably Ive never had one that wasn't a bit soggy a sort of Let's get rid of this , and make that for me the That was not thought out too well but , I do like the looks of your BB ! Id like those who use Fz or not old B's to consider : what might mike your BB tastier and more interesting ? with very little trouble to you Spices , that you have ? Cinnamon , freshly greater Nutmeg [ the great sleeper of all spices ] and Id suggest a thicker layer of Frosting. I do like the CS as a starter a bit of Rum or Rhum ?

TraderJoes has two ' crisps ' Apple ( some tartness there ) and Peach ( sweeter , with decent peach flavor I love Crisp , crumbles etc they demo'd both the other day very nice Id say for No Work , etc if you like crisp very nice. forgot the vanilla Ice Cream Peach up next. too bad their isn't a Sour Cherry

    Breakfast 2019

    this has been my standard breakfast for a few months now yes a few months. I look forward to it. its easy , and very tasty now the 'On-the-Vine' tomatoes are not so toothsome , and taste like tomatoes not like the ones I used to grow in my garden , but tomatoes none the less. $ 0.99 an lbs @ MarketBasket , $ 2.49 else-ware , same tomatoes. the eggs are ' steam-sauted ' on TJ's sourdough ( Pigs that Fly , N.H. ) and Jones Pork Microwave'd sausages. 45 seconds work fine for my system. Im right now looking forward to tomorrow's breakfast , same as above. Microwavable " Crispy " scrapple would be nice , but Im not going to hold my breath
  21. Coupon Time ! possibly time to take a few hits for the Team McD and BurgerKing sent me coupons , good for this month yest. I caved and got 2 1/4 lb'ers w cheese. the McD is close by , and i micro'd the burger to get them hot enough to melt the cheese. these were ' fresh meat ' burgers , said to boost sales 30 % Im not sure what 1/4 lbs'ers were like w Fz meat these were neither here nor there , and not meaty at all. however , they were not ' sweet ' , as I recall BigM's are over all pretty blah blah the price for one of these in my area is $ 6.30 w tax seems high to me for the experience over all. at the usual rate for one. even 6.39 for two , wont get me to go back.

  23. Im not sure Id pass flour through these mills more than once. rather , find the finest setting and leave it at that. what's my logic ? heat. and Im guessing heat will damage flavor, which is what home milling is about. I say this having considerable experience grinding my own coffee.
