  1. @chefmd Id like to see what you do with that Tranch that being said maybe the Cognocenti or the serious Meat Eaters here might chime in on 1 ) aged choice the meat we might get easily at times 2 ) aged Prime far mo difficult to fined ? still is how you cook it and provide for yourself and your family and friends cheers
  2. @chefmd looks nice looks like its still on the butchers counter I on a list of things ld like to try at least once is to dry age a big hunk of beef in my refrigerator for a zillion days , w one of those semi-pemeable plastic bags that you Vac. A high end store near me has their own dry age chamber that you can see they then cut out the high end cuts and place them in the service butchers counter I tried one item I was not impressed , even though it was 28 day dry aged then I realized , the meat they are aging is Choice , not Prime. for me , and possibly only me I can do better w choice if I can see the marbling and maybe get the meat on sale [ ed.: " sale ' here means its a hurdle, that limits item that are maybe not so good for R etc. to be fair : if there were inside skirts easily available rotuts would cave in immediately ! ]
  3. the aroma of the Billies is not that they are dirty-ish after all , the BardYard animals rarely visit The A Spa the male goat aromata is hormonal and secretory I can't say what female goats smell like they do produce excellent milk for cheese ...............
  4. as far as I can tell Kid or Cabrito , ie a goat that is way less than one year is a TX thing and very difficult to get else ware its delicious and although it has its own taste < 1 year is quite mild. I can only get Goat here , Fz from some ethnic groceries , on the decline as WF is gobbling up their real estate for the Gentry Swells [ ed.: FD I own a very small number of AMZN shares. Go AMXN ! ] I do hope you enjoyed it , and it sells out for a reason in TX Do not , in any way , confuse Kid or Cabritto for Goat. " Goat " is very very full flavored " Aged BarnYard" might be a pointer for you have you ever been near a Billy Goat ? a bit like that and more. that's why its always curried in Jamaica
  5. Ive purchased the three vac'd veg boxes above. Ive tried the Mediterranean pack and found the artichokes OK , and the rest mushy and flavorless. the pack says the veg are in EVVO , but the oil is completely tasteless to me the Tapas artichoke 1/2's were better , simply because they were just artichokes. the oil is sunflower , and thus tasteless. I have not tried the tomatoes yet , but Im not optimistic .

Clam pizza has to be the original Pepe's in New Haven. there is a Pepe's w of BOS , but its clam pizza is not that good. excellent Bacon pizza just like original Pepe's clam w bellies : in Essex MA clams in essex ma P.S.: I now no longer have to go up to essex for clams w bellies the Legal Seafood near me ( not others , BTW ) make superb fried clams w bellies and superb fish and chips w halibut.

Canneles were discussed in another thread seems a D/C for TJ's right now called yest and they saved me two there were 12 in the freezer section , so I bought 4 get them while you can. these are to die for : they come in different shapes at different times of the year. you will eat the whole packages so plan accordingly don't know what the next ' season ' is might be halloween * sigh *

RB40 is really different than other Fish Sauces I watched the SVE vid , and can't recall their FS choice it was not RB40 RB40 has no medicinal flavors what so ever , on my palate. the Boys @ SVE have very particular tastes. and like ' meat' as Steak if you get my drift and like their steak more done than I do once you8 take that into account in their reviews , and don't mind their ' style " they have done a lot of experiments I then do not have to do. I wouldn't might a Box or Two of the outstanding Meat they get for their Vids I hope complementary of course.
  25. an extreemly interesting show from GB , a BBC series spent some time loo0king into how restaurants ' manage ' their customers for profit. the design of the menu is important , to steer you to more expensive and more profitable dishes. so is where they sit various people : " Attractive " get more visible seating , and the ambiance / noise is purposeful , even for chains: hard seats , noise reflective surfaces , bright lights create an atmosphere that is not attractive for lingering these restaurants are designed for turn-over as a profit center comfortable chair , subdued lighting , absorptive surfaces are designed for lingering and ordering a second bottle of wine, a big profit maker right their.
