I don't think you will get to equilibrium @ 45 minutes for a 2 " steak from the refrigerator , lets say. room temp for starting ? un clear "" Cook for at least 45 minutes, and up to 4 hours. "" remember F.M. is tender . @ 45 min the center will be very rare not so bad if you have a nice sauce to add some flavor a key w SV is : "" and up to 4 hours "" id not rush SV , especially at the lower end of the time suggestions because you dont have too.

how thick were the tenderloins ? 2.5" thick takes 5 hours 10 minutes https://www.amazingfoodmadeeasy.com/pages/sous-vide-timing-ruler-instructions to get to 131 F ( close to 129 for our purposes ) for review purposes : from the above link 1.5 " is 2 h 20 min. Ive seen more complete curves in the past but I can't point to them just now. one big benefit of SV , esp at those low temps . a little more time in the bath isn't going to ruin the meat.

BTW in my Aldi all hams are 50 % off these I think are refrigerated at least they came from the same cases I got my bone-in spiral @ easter time. I don't think they are Fz , and there was a notice taped on top of each compartment . can't say if it's the same for you. Id love to like Ham a bit more .... and get a spiral boneless for summer sandwiches. dosed out and vaca'd and Fz I now realize that spiral boneless even though the initial cost ( even on sale ) it higher then end result on the plate or in the sandwich is less expensive.

@lindag very interesting would e enjoy your review you prefer these over various others on Amazon ?

Aldi has an unusual business practice : I get the supermarket circulars in the US mail , either Thursday or Friday. Aldi's circular ads start Monday - Sunday. however , the meat sales , including fish , start on Wednesday and all are " while supplies last " unusual . Are they trying to get me in the store Monday , for 49 cent mangos and back again on Wednesday ? odd.

@Smithy you are moving in the proper direction. freshly ground , whole toasted ( not burnt ! ) cumin seed might be a consideration . a littlewillgo a long way

@Anna N I agree. most non-meat labeled hot dogs have a lot of pork in then HD's w cheese is a sort of culinary disease.

went to Aldi this Am senior hours mostly for more bird seed. but they did not have any more 20 lbs bag no problem ,I ordered 2 x 40 lbs from walmart Im guessing part of the Aldi ' frugal ' business model is they keep very little stock reserves. thus when the pallet of 20 lbs bird seed was gone , it was replaced by something else. i think the birds like the Pennington better they did have two chocolates they were out of before : mint dark , and orange dark. they also had the bratwursts I like. so not a bad trip. and no one else in the store until I left.

I almost got a 3 mm copper asparagus pot , w a fitting lid in Paris , when I got my other dozen or so it was the next pan up. for asparagus probably 4 - 5 "in diameter , 13 " tall. My father got angina so I stopped. Nice i bet it was. @Anna N "" holding spare rolls of toilet paper in the bathroom out of reach of playful pets' nice Earthquake , whom you see upper L loved doing the Toilet Roll Work Out. I saw the results my father, recovered from soo0o many copper pans he used two pans : thin , aluminum , 5 am for his needs and did well anyway he put heavy rubber band on the TP worked. never heard what Earthquake thought about it.

@Lord_Pall "" Oven is mega dirty. No idea how to keep this thing clean. Oven cleaner didn't help with cooked on stuff, but it also made the oven stinky for a while since it's so airtight. I'm not just wiping things out. I have stopped air frying things that can get fat all over for this reason. "" doesn't this oven have a ' Steam-Clean ' setting ? similar to the CSO major CombiOvens have this , as a key feature but those are plumbed in w a drain and some actually wash the oven just like a dishwasher and do a rinse cycle w pain water. the CSO get very clean w just steam you do have to wipe it down after and have an empty drain ' box'
