Your Daily Sweets: What are you making and baking? (2012–2014)
Darienne replied to a topic in Pastry & Baking
Wonderful, PanaCan. We should all have a friend like you...or Kim Shook. -
Saw Thai jasmine rice in the local supermarket today but didn't buy it as it was 'jasmine'. Is this the Thai rice to which people refer? If so, I"ll buy it next trip and try it.

Good topic, Liuzhou. Radtek: just how do you rinse your rice? Our daughter is giving us a 7 cup rice cooker for Christmas and so another piece of tech enters our lives. My DH does not like brown rice in any form. Once he tasted white Basmati rice, that was his rice for years. Now I have converted (pun?) him to white Jasmine rice. If ever I've had Thai rice I don't remember it. Oh, he doesn't like rice pudding either. Probably grew up eating it. My Mother never made rice pudding so I like it, but there's no point in making it. I need a REALLY GOOD recipe. He loves Capirotada (Mexican bread pudding) the way I make it, so perhaps we could work a rice pudding into our lives also. I'll look for Thai rice in our local Oriental market and give it a try.

Yard Sale, Thrift Store, Junk Heap Shopping (Part 2)
Darienne replied to a topic in Kitchen Consumer
Found this neat recipe for ginger and chocolate (http://choclogblog.blogspot.com/2011/01/ginger-chocolates.html) and thought how good they would taste. Alas, I am far from home with no little molds to use. Then in the local market I saw this large pan of small molds, Wilton, $11.99 on sale doe $9.99. Should I? Don't be greedy, you have those pans at home. You can't always have everything you want. Put the pan of tiny molds into my shopping basket. Took it out. Two days in a row. Grow up, Darienne. BUT THEN...we went to Wabi Sabi, our favorite second hand store in Moab to find a vacuum cleaner nozzle and what did I find in the kitchen section? The VERY pan for $3. It was a sign to buy the pan and make the candies. We didn't find the nozzle. -
This came to my inbox today. Some of you might be interested. http://us5.campaign-archive2.com/?u=3456528dadb5a20fba1f09213&id=3d8fb0bf93&e=f8a9c9cfb4

Thank you FrogPrincess for posting. Reminds me to post. I've bought one cookbook since coming to Utah this year and paid an Amazon price: Muy Bueno (the jury is still out about how useful it will be) and from second hand stores: 7 books. (Also 5 Bon Appetit cookbooks for a friend who is collecting them.) It's hard to resist a good cookbook at $.50 or less.

One day late from my promise...sugar burn...ouch, very big ouch. Delicious muffins from the recipe from PanaCan. Thanks again. Oh, I doubled the walnuts, but I always do that sort of thing with the nut measure.

Molded and Filled Chocolates: Troubleshooting and Techniques
Darienne replied to a topic in Pastry & Baking
The catalog from Tomric, http://tomric.com/ , gives complete dimensions for every mold. Very helpful. -
I forgot. I apologize. It was sweet of you to send the recipe and I shall make them this very night. And shall call them Pumpkin PanaCan in your honour. You can relax now. Tomorrow is Tuesday.
-
NO...NO...just send me a muffin recipe. A real recipe. Nothing else. It's come to that.
-
Thanks for all the suggestions. I'm now waiting for PanaCan's cake recipe. And that's not why the dogs have pumpkin.
-
With gratitude, I accept your offer. Muffins are probably what I"m looking for.

I am even lazier than you though. I had already gotten that far...was hoping for a single recipe...not a challenge to look through a bunch...some of which are not suitable, BTW, to pick one. I have a couple of packages of candied ginger p[pieces. Might work them in as well as walnuts.
-
Thanks. Can't freeze it...might be able to give it away although not too likely. I was secretly hoping for a full-blown muffin recipe.

While away from home, our dogs have canned pumpkin added to their breakfasts. Long story, won't bore you. So, DH on his last grocery-buying round bought pie filling (sugar, sugar, sugar) instead of just plain pumpkin and this morning I opened the can without checking the label. OK. Now I have this great quantity of canned pumpkin pie filling. What shall I do with it, if any? Anyone have a suitable cake or muffin recipe? Or? Or should I simply upend it into the garbage? Thanks.

You could use it in a bread pudding.

I'd go for buying one (or more) and taking a photo of the scone whole and then cut in half or whatever. It does sound delicious. And if you PM'd me the store's name and location, I'd have our next visitors from Ottawa bring us a half dozen.

Is this Chinese knife sufficient for chopping poultry?
Darienne replied to a topic in China: Cooking & Baking
Our dogs get raw chicken thighs and legs and Ed does chop the pieces into smaller pieces for them. Dogs can digest raw bones. Just not cooked bones. I'll tell him about using a mallet, but he likes the heavy chopping thing. I suspect he would feel the mallet would slow him down. -

That is so interesting. Just got my DH's cleaver for chopping the dogs' dinners out of the drawer and it's a #3. Made in Hong Kong. It's stood up very well. -
Two for sale on Amazon. $499.00. Not inexpensive..

My hands are not what they used to be, so I always ask DH to juice the limes for me if he is nearby. And often we pop them into the microwave for a few seconds. Yesterday he put the limes into the microwave...I didn't see what time he set it for and certainly didn't ask after. He took them out and cut into one lime and it sort of exploded sending juice straight into his eye. I had to help this temporarily blinded man to the sink to flush his eyes. Quelle surprise!

And just WHY doesn't gelatine dissolve in coconut milk? It dissolves in tomato juice. It must dissolve in a lot of 'liquidy' items.

Those wide mouth funnels have so many uses. I couldn't function without them.
