Everytime I have ordered them at Mexican places, there does not seem to be a difference, except for maybe the cut of meat. Is that it?

Do you mean "al carbon"? I've never run into carbonara in a Mexican place.

True al carbon should be cooked over charcoal, while carne asada actually means roasted, though most carne asada I see in practice is cooked on the char broiler. Also, when I order asada I expect it to come with tomatillo salsa, and when I order al carbon I just top it with raw onions and cilantro and a squeeze of lime.

You are right...al carbon is correct...sorry, it was a late night last night.

Al Carbon was what I am looking for. I would like to try to make it this weekend.

Anyone got any recipe ideas?

Around New Mexico, carne asada is also marinated in red chiles and garlic.

I'm a canning clean freak because there's no sorry large enough to cover the, "Oops! I gave you botulism" regrets.

Playing tag-along.....

Since I thought the difference between al pastor and carne asada was charcoal versus roasting, what's the difference between al pastor and al carbon?
