BTW, looking for sourdough bread information is what led me to eGullet. Great info here!

Over 60 years later, I still fondly remember Freihofer's Vienna Bread. I still like the end of a nice crusty loaf. I still love carbohydrates and always will, and I still have a weight problem, and always will, but it shifted from under to over a few years after this picture was taken.

let's just talk about why not eating carbohydrates makes us more like the "dumb americans" that we have always had the reputation of being...

in japan and other asian countries, rice is the building block to a sushi roll, sashimi roll, an entire meal. Eggrolls wouldn't be the same either...

in india and tuscany, flatbreads hold everything together. they mop up all of that flavor that would otherwise be neglected. how can you have a curry without basmati rice? how can you leave that bolognese at the bottom of your bowl?

in greece and the mediterranean, they have those wonderful falafals.

our world would not be the same if we didn't have these lovely foods..why must we make this name for our country? why must we scorn the food that serves as a foundation to a good dish? why must we critisize a food group that has been all that some countries can afford? it's really so sad when you think about it...

i love the screw atkins t-shirt idea! damn them all... all the low-carb/atkins crazed dieters are driving up the prices of my beloved cereals!

That doesn't make sense. If demand for carbohydrates has declined, then price would decline as well, not increase, unless the supply has dropped in anticipation of declining demand while demand had actually stayed steady. If you're seeing increases in grains, I doubt it's low-carb dieters' faults.

I am surrounded by people on the South Beach Diet. I am so f#*% sick of low carb, low sugar everything. And I don't need to see sugar free jello for a long, long time.

When I am feeling particularly mean I buy a box of donughts "for the class" just to torture my coworker. Then again, I have to listen to her whinning about bread all day long.

A very large number of my co-workers are doing Atkins or the South Beach. I feel that it's my civic duty to bring in as many:

quick breads

...as possible.

Heck, maybe I enjoy tormenting them a little too much! Silly peoples!! I love the staff of life! :cool:

As an interesting aside, at least one of my co-workers has been on a diet since I started working here, 5 years ago. She even had the gastric bypass surgery. She lost some weight, but has been levelled off at her current weight for the past 3 years. She moans about bread every single day. :wacko:

What's in that timpano? What's the region of origin of timpanos?

I first discovered it in a Mario Batali cookbook, where he references it to the movie, Big Night. More timpano information here.

This one in particular was pasta dough, besciamella sauce, ziti, neapolitan ragu, ziti, meatballs, ziti, parmesan... did I mention that there was some ziti in it, too. :biggrin:

OK so I'm on a Atkins/South Beach sort of diet Good Carbs/Good Fats. I usually eat whole grain breads (too many carbs makes too much me) anyway, I want to thank the peolpe who mentioned Plugra. I read this thread and saw plugra in Shop Rite, I figured what the heck and purchased it, well now we are all addicted, thank you for my 2.99 habit. :)

I recently started exercising (couple weeks ago), and decided that eating healthy and burning more calories than I intake is the way to go. I came to this decision because, quite frankly, I love food. LOVE it. I love the way a big slice of well-cooked pizza can cure the soul, or how a perfectly done steak can melt in your mouth. LOVE.

At any rate, I was talking to someone about it, and they told me that I had to cut Breads, Cheeses, and Fruits out of my diet if I wanted to lose weight. I just smiled and nodded. Those three things are some of the world's greatest gift to Chefs, Family cooks, and food-junkies world-wide. How could I just ignore them?

That said, my best friend was able to lose over 120 pounds in a year by eating properly and exercising everyday. One of the things he utilized was low-carb dieting. The allure of a "quick fix" diet is good, I'm sure, and I've heard it can work wonders. However, No amount of ignoring breads, pastas, beer, and alot of basics in cooking, will get you thin. I remember in middle school, on the wrestling team, we were told to eat a great big bowl of spaghetti for dinner the night before a meet, so we'd have lots of energy for it. It's a good thing we were working our butts off in practice, or that "great big bowl" would have gone straight to my thighs.

The little rolls made in Austria with butter and their whole apricot jam

During visits growing up to my grandparents in Austria they would always want to have some different things for breakfast--but all we wanted were those rolls with good sweet butter and either local honey or my Grandmother's apricot jam.

Besides the small rolls, they have similar ones that are in the shape of a crescent, called 'kipfel'. I'm not sure what the french equivalent would be for these breads/rolls although I bet there is one.

This was my first great, great bread memory.

In CT growing up we were also lucky to have an excellent rye bread called "Waterbury Rye". They distribute all over CT to Austrian, German, Polish delis and such. It has a nice dense crumb and a great crust. Hmmm, perfect to eat with butter and excellent ham like a Westphalian. Can only get this kind of rye from a real bakery.

In SF Bay Area I'm lucky to have Acme bread; I love their walnut wheat bread for breakfast or with a cheese course (many SF restaurants use it for this). (Acme has a good rye also). Although I have not done a lot of serious bread baking, I would try if I could get this recipe or something close to it. :smile:

Mmmm. Bread. I am lucky enough to be living in Paris and there is no way in hell I would give up crusty, fresh bagettes. Just had a few slices toasted with fig preserves.

Atkins/South Beach/Lo-Carb, seems like a twisted iteration of the low-fat obsession of the 80's. Does anyone remember Snack Wells? Now that I hear "low-carb" is a packaging term on the supermarket shelf, I am having visions of "lite" and "100% fat free" Has anyone started seeing "Beef: 100% Carb-free" labels?
