Hi..At the moment I need to store and utilize 8 large cartons of ripe and overripe avocados... I have already used 2 cartons to make avocado oil. Wondering about other ways to store it long-term for aesthetic and culinary purposes :)

Any ideas/opinions/advices appreciated ;))

First, a question: how did you make avocado oil? I know it can be done, but have no idea how to go about it.

As far as using and/or preserving avocados for later use: a few years ago my best friend put pulp in freezer bags, mixed in a bit of lemon juice to prevent discoloration, squeezed all the air out, and froze the pulp for later use in guacamole. It worked well for her. As I recall it didn't work as well for me, but that might have had to do with how long I held the avocados until I tried it. I wrote about it here (scroll down to the bottom) but don't seem to have followed up with the results.

Q & A with a friend in Wisconsin:

Q: What's your secret for consistently getting such nice-looking avocados?

A: I buy a bag 5 or so at a time and when all ripe. Place avocados in a bowl with water till covered set in the refrigerator and they will keep for a week and stay the same.

Q: just to be clear, are the 'cados placed in the water while in their skins?

A: Yes just like you bought them.  I had a minute, and I wanted to post how I keep them. These have been in the fridge since Monday.

Its a time consuming but simple process.. Blend avocado pulp into a smooth paste. Then dry it in a dehydrator or the oven or in the sun as a sheet. Once its dried completely it can be squeezed through a muslin cloth to give oil.

Thats it.

This a pretty good idea honestly. I read your past posts about it.. I hope it works for me. I think I'll try putting it in air tight boxes instead and see bc I'll need way too many zip lock bags for the amount I have atm.

Wow I didn't know this was a way to store avocados. I'll try it when I have a small batch of avocados. The problem is that each carton I have has 20-30 avocados. And there are 6 cartons atm. So sadly my fridge doesn't have much space to keep them this way T_T

If you’re not already planning on doing it, press a piece of plastic wrap on each box, then press it onto the avocado surface, trying to avoid air pockets under the plastic wrap.

Update: I have preserved most of them in puree form and securely frozen some in plastic bags and some in boxes. The ones Im gonna consume (and use on my hands and feet XD) I have added lemon to the puree and frozen the rest without any lemon because Im planning to use it on my haircare in the long term.

As for the remaining cartons I'll be using them to make oil as a large amount is required for just a decent amount of it.

Thanks everyone :))
