Quick & Cheap Pork and Chicken Broth

Nice.  Neck bones provide great flavor and gelatin. Unlike @Tropicalsenior, I like to cook the crap out of any meat when making stock, so all the flavor gets extracted into the stock.  I would do what she does if making directly making soup, but I always make soup from premade stock, so my stock is all meat flavor and gelatin - I also don't use any aromatics since those extract quickly and can be done when making the final product.

I was going to include the aromatics but after reading the suggestions here decided to do so after the extraction.  I'm only using green onions and ginger in this batch, and they (certainly the onions) are relatively delicate, so later is probably better in any case.

 

My thanks to everyone who's made suggestions and offered ideas.

I'm assuming those pork bones from Ranch 99 are not smoked. That looks like a good deal. Just curious, did you happen to see if they had smoked ones? I haven't been there in several years, but now that crab season is open a field trip may be in my near future.

No, Katie, they're not smoked. While I wasn't looking for a smoked product, I did cruise most of the meat case, and none was evident.

 

I wasn't sure if the price was particularly good, although they were quite a bit lower than that of Berkeley's Local Butcher, where I bought neck bones some months ago.  I was going to buy some chicken pieces, but the parts were three to four times more expensive than at Costco.

Didn't get a chance to read this whole thread.

 

If you don't want to spend some money (actually not that expensive), in many Chinese markets, they sell special old chickens for making broth. They also sell whole chicken carcasses with some meat on them for broth making. 

I like to make pork broth using pork neck bones. Also plenty in Chinese markets.

Reading the thread, or at least the last few posts, would have been helpful. FWIW, Costo has some packaged chicken drumsticks for less than $1.00-lb.
