Modernist Bread

Recommended Posts

With Modernist Cuisine I waited a couple of years and ended up with a copy from the 6th printing run the advantage of this was that all errors picked up in the erratta had been corrected in the print copy.  I am looking to get modernist bread soon and wondered if someone had purchased it recently to check or if someone knew of hand if they have printed any additional corrected runs

I messaged the team before prime day and this was the reply considering how few corrections there are this time I'm at a loss of whether to wait or not

Thanks for your question. We understand your concerns. We’re still on the first printing, but we do have a corrections page on our website that has all of the corrections to date so far.

That's not true. I emailed about two errors I found and they acknowledged them in January and March but neither are on the corrections page.

One was the incorrect pullman pan size in the pain de mie recipe and one was the incorrect page number reference for parmesan cheese water in the parmesan sour dough recipe.

      THE BOOKS ARE SOLD

I have Volumes 1 ,2 and 4 of Jean-Pierre Wybauw's Great Chocolate books are for sale.

The books are in great shape!  There is some tape on the corner of the front of volume 1 that I used to keep it together after a drop.  Volume 1 is also autographed by the author (See pics below).

I'm asking $150 for the lot OBO.

Let me know if interested or if you have questions

Has anyone come across a digital version of Practical Professional Cookery (revised 3rd edition) H.L. Cracknell & R.J. Kaufmann.
I am using this as the textbook for my culinary arts students and a digital version would come in very handy for creating notes and handouts.

Is there any recipe from the modernist universe or any other galaxy to make ketogenic (low carb) puff pastry and strudel type doughs?  Unusual ingredients OK.  There must be a way...

I'm thinking about starting a blog featuring the recipes of antoine Carême that I've translated from 1700s French? No English versions of his works exist and his work is hard to find, even though he is the greatest chef who ever lived. After I get through his works I'd add menon, la Varenne, and other hard to find, but historically important masters of French cuisine.
