After three days, do you take the steak out of the bag, or can you leave it in the bag with fish sauce and put it straight into the sous vide bath?

An alternate way is to use a DryAge steak bag to age the meat. Look them up on the net. As long as you have the vacuum machine and refrigerator space you are in business. I found that 28 days was perfect.

You need to take the steak out of the bag because it’ll taste too strong if you cook it in the fish sauce.

Should the steak also be rinsed before being cooked? Or is simply changing the bag enough?

Yes. Rinse and pat the steak dry before cooking it sous vide.
