Has anyone ever tried to make anything like the "pizza" that Achatz served a Trio before moving to Alinea. I found a description online that says it's "a postage-stamp-sized dehydrated vegetable paper seasoned with different powders designed to evoke a pepperoni pizza."

Any ideas where to start trying to recreate or riff on this?

I'm guessing you'd start with a methyl cellulose base. Here Alex and Aki in Ideas in Food make a sauerkraut paper.

I'm wondering if it would be a tomato paper base, sprinkled with some powders made from cheese and pepperoni in some way - another hydrocolloid I expect. I guess you could do an olive oil powder with maltodextrin.

Might get some ideas for the components from the Khymos recipe collection.
