Having unwrapped raw meat lolling around my fridge is one of the few things that scare me in the kitchen so I only rub about an hour before it hits the fire. I usually use paprika, onion and garlic powders, kosher salt, oregano, black, white and cayenne peppers and pehaps a touch of thyme. Sometimes I have it made up in a shaker, sometimes mixed in a bowl and sometimes I just pile it on a layer at a time. For ribs I will also take some of the original rub and mix with brown sugar and pack that onto the cooked ribs for the last 20 min...sprinkled with cider vin. I have discovered that my standard isnt so great when oven roasting meats in the winter...overpowers without the smoke tracey

Markk...et al Its amazing how the same ingrediants can have such differnt outcomes I also started with softshell crabs, asparagus and red ripe tomatoes among other things first course was seared scallops with snowpeas, asparagus scallions with ginger. then we moved on to cornmeal crusted crabs on brioch rolls with tomatoes and watercress. Well hubby found out he doesnt like sofshell crabs, the young-un loved hers, and I somehow in that moment between plating hers and mine had a tummy bug manifest. So the child and the dogs ate some really nice softshell crab sandwiches. oh well spaghetti tonight tracey

Ok Sheena may as well pick your brain Seafood pancake - how should one eat that pan chan....dig right in when they put it down? oh, and if you run out of lettuce can you drop meat slices on your rice and spoon it all up...I am guessing No tracey damn I want Korean food again I think they like us as KeoKu we keep bringing new people with us -
Hey I had forgotten about short ribs too...they are great on the grill Pam I am guessing just follow the basic butt instructions perhaps with Mike's recomendation of 175 as a final temp. If you are looking for shreading you can stick 2 forks in there at that temp and see if you can get a good twist of meat out....sauce rolls and coleslaw, what time is dinner? tracey

I actually did try their breakfast recently.... if the sausage and egg had been hot, the biscuit would have ranked in my top 10...the only thing hot was the coffee, so I hear I had a diet soda this is what you get when you leave 3 hours for a 2 hour drive tracey

Meatfest 2007 is back on a pair of lamb chops with panseard zucchini, garlic and diced tomatoes the lamb was way underdone so I ate one all rubbery and threw the other back in the pan where it proceeded to somehow over cook itself the zucchini was really good though tracey

panfried either dusted, crusted or battered...all good If dusted you can cover with a weight(brick in foil) to make them cook up firmer... Watch Out they Spit and Spatter pretty bad tracey

Last night I took a break from the meatfest of the past few weeks when I saw the words shrimp-on-sale. And so it was shrimp, diced tomato, diced onion and lots of garlic all cooked in a butter/olive oil mix. I sauced it up with a good splash of chablis and some fish stock, thickened with a cheat - flour wine slurry..... Over spaghetti and tonight...grilled chicken, thighs for me breasts for himself. Served with guacamole, cucumber salad and a teeny tiny baked potato for me...a regular sized potato for him thank you for your participation tracey

I just make sure I get 1 or 2 paper bags a week to empty the vaccume cleaner cup into when its dog hair removal day. I cant just tip the cup into the trash can because its got a big rounded swing cover to keep the dogs out of it. And I cant take the cover off because the plastic bags are too small and need the cover to hold them up....so here we are back at plastic bags. tracey we dont have to walk the dog she uses the front yard

Oh hell what about the diner waitress... that whole breakfast for 2 only cost about 11 dollars, even in the diner dinner would have been 40...do you tip on the bill or your conscience? T
