The first time I really liked Caponata it was done as a puree on a crostini as an amuse. There are so many things in there that aren't favorites, but all blended together it was a Wow tracey

...And sometimes your dish doesn't work with the theme that you didn't know about. Like when I brought baked beans that were about 50% just smoked pork butt to a July 4th party. Baked Beans - BBQ perfect fit right? The hostess was serving Lemon Chicken, Eggplant Parm, Baked Ziti... etc. It was like somone let my grandmother loose in the kitchen : ) not a lot of beans eaten tracey

This past Easter I had a big chunk of Locatelli brand Pecorino on the counter waiting to be shaved over some asparagus, and a 4 yr old guest discovered it. She started nibbling and continued with little pieces for about 10 min until she brought the last chunk back to her mother saying it was "too spicy with salt". I never did put it on the asparagus so she would eat them at dinner. Serve with chunks of Mortadella and fruit all drizzled with Good Balsamic tracey

Any deli/gourmet take out shop I have ever worked in at least attempted to make enough of any sturdy salad to last for 3 sale days...that gave the customer a day or 2 to hold it at home. Also many things were mixed but not dressed until they were portioned into the display case. I remember so many customers saying...oh we dont eat leftovers...What the hell did they think deli food was? You want everthing cooked A la minute, go to Burger King tracey

A few years ago I saw a story about a cafe in the Hamptons doing a Muffin pan Quiche/Frittata as a take away breakfast item. It was meant as a low carb alternative to a muffin as for the hummus, you could change it up by using different kinds of beans and regional seasonings tracey

The difference between this and german potatoe salad as far as I know is that the potatoes are not fried, but tossed with a warm dressing in german potato salad while these slices are fried. ← We need a potato salad ASAP one day at work so I did something similar with the roasted red potatoes we already had... tracey

Just something to think about...the Pasta will probabley be looked at by most guests as a side, make sure there is enough. And a side that actually goes with the pasta for the Veg guests also... A grilled Vegetable tort might make a good Veg entree, then a pasta that goes with the Pork, Chicken and Veg. Maybe a "primavera" with white sauce and fresh veggies. T

Then moving over to the foil chafers we had Lemon chicken, Grilled chicken, Baked ziti, Eggplant parm, Sausage and peppers, Mac n cheese, my Baked beans with pulled pork, Macaroni salad, Broccoli Salad and Tomato salad....Hot dogs were offered but no takers till a few hours later...
