The first time I made Snickerdoodles I didn't have any cream of tarter, and for some reason decided to use baking powder instead of baking soda and cream of tarter. I use a mini scoop to form the cookies and roll them in the cinnamon sugar and they dont change shape at all when baked. Turn out as little balls that are a touch cakey...I love 'em. They can even take a few seconds in the microwave to warm them up if you want. tracey

Delicious Pie Crust and Pies recipes for High Altitudes?
rooftop1000 replied to a topic in Pastry & Baking
Would there be any difference in the thickening/setting of the filling?...Just wondering tracey -
There are somethings that are just automatic while shopping like Hellmans Mayo or Heinz Ketchup, and Reynolds heavy duty foil but for most other products a cheaper alternative will get tried out. If the cheaper stuff is good it gets to stay on the list, and sometimes they are so similar you know they are co-packing with the "real" brand. A sandwich bag that gets used once, Sugar, Cider or white Vinigar, Butter, hubby's American cheese can all be store brand if they are sale. tracey

I just did this with Pheasant but it's also good with pork or duck breast. I pan seared the meat and removed it, then deglazed the pan with Sherry Vin, a little chicken stock and added Cherry Preserves. Return the meat to coat and reduce the sauce...Watch out for the fumes when you add the Vinegar tracey

rooftop1000 replied to a topic in Cooking
Having just picked up a package of this Cure for wild game or domestic meat.... http://www.lemproducts.com/product/169/Cure_Ham_Curing_Kits I wanted to let everyone know that they carry this at Gander Mtn a chain of Hunting Fishing Outdoor etc Stores. They had Grinders, Stuffers, assorted Casings and different flavored and unflavored Cures. Just another option. Bacon coming up.... tracey -
I wonder if the Stella D'Oro Anisette Toast cookies would work flavor wise to replace the Amoretti cookies. I cant remember if they have a real name... tracey

rooftop1000 replied to a topic in Cookbooks & References
I have just spent 2 hours looking for the title of the cook book I checked out over, and over, and over, as a child. I havent found it yet but the book was pink and had a recipe for candle stick salad.... In my search I found this site which I will now torture you all with, you may thank or hunt me down to kill me later LOL http://search.rubylane.com/search?page=1&ss=cookbook tracey -

You could call it the Chicken or the Egg...and do a Frittata, braised chicken legs or thighs with a white bean puree and veg, and a flan for dessert. tracey

This item https://www.dartcontainer.com/web/products.nsf/pages/CoffeeServiceUS just popped into my head while thinking about holidays and parties at my grandmothers. Anyone else remember these cups or anything else you havent seen in, oh...20 years? tracey

Crispin Apples are supposed to be the type thats browns off the slowest. Steven does PJ ever eat the apple slices with the cheddar cheese?(it's so good, makes the cheese go all creamy from the acid in the apples) I havent seen any bagel chips yet, you could just have a deli run a few through the slicer then toast them off at home. The premade bagel chips seem unnecessarily greasy to me. Near the apple display in most local markets is a caramel dip that is just so evil and good, maybe mixed with some cream cheese to cut the sugar content it would still be a great fruit dip. Now I have to go have apples and cheddar for breakfast tracey

I really like the vegetable pot pie idea, I may be having a tablefull of vegetarians as my daughters guests on Christmas. My thought had been lasagna without meat sauce for them but it is so predictable. tracey

Every once in a while I get the urge to try using my "freeze the bowl type" ice cream maker to make butter. I plan to refrigerate the bowl and try it someday. Any opinions? tracey

I think the cake would be much firmer and possibly seem dry. Carrot cakes can have an oily feel to them but I think thats just part of the package. tracey

Turning on a gas oven for a few min to get up some heat for proofing dough is an easy cheat....forgetting your oven is on with doughballs covered in plastic wrap is not so good. Oh well who needs a second rise, I did manage to get the plastic off tracey

Bizarre Foods on the Travel channel went to a restaurant in Iceland where all the kitchen equipment is run by steam...but none of the links are working quite right. With the vaccum chamber they mention the temp of the steam could be pretty damn high, depending on how long it initially takes to come to temp it looks interesting. Tracey

This is more funny than disasterous to be sure.... After starting 2 new prescriptions today I thought a roast chicken would be a nice easy dinner to make. I seasoned it up dropped it in the roasting pan with a breif thought that it looked odd, but it was a small chicken.. It came out beautiful with nice golden, crispy, skin. Then I started carving it, well it turned into hacking at it...then I eventually realized I cooked it upside down. So, I pulled all the crispy skin off the bottom and flipped her over. Damn tasty chicken but I am glad we didn't have company. tracey

If you live anywhere near a place that has Winemaking supplies they may carry Oak pieces that are designed for using in plastic containers to simulate oak barrel aging for homemade wine. Corrados in Clifon NJ also has vinegar mothers... tracey

I haven't been dissapointed with Villa Madrid on Ringwood Ave in Pompton Lakes yet, well the bread sucks...there are quite a few places up towards West Milford/Greewood Lake area that I havent tried in ages. Valiani's Deli in Pompton Lakes makes a mean fresh Mozz a few times daily...good generic red sauce Italian and specialty pizza at Franks by the Shoprite in West Milford (great prices for when you dont care about a tablecloth) too bad the movie theatre just closed though. Farmers Market Saturday mornings at the Park and Ride/Library parking lot.. tracey
