SEA: Specialist baking supplies

I need to get some 2oz cannele silicon baking molds in a (by Wednesday). I've tried City Kitchens, Mrs Cooks at U Village and Williams Sonoma. I've also looked on the Sur la Table website. I've found quite a few websites which offer them for sale, but the cost of shipping is prohibitive. Where do pro bakers in this town shop ?

FWED buys his supplies at a place in Mukilteo - I think it might be this one Dawn's If they don't have it, I'd PM FWED, since he's not around here every day. That's a cute mold - now I want one!

Seriously. Sur La Table and Williams Sonoma.....fun, but way overpriced.

City Kitchens has a lot of stuff, but it seems they never have what I need, baking-wise.

Sometimes I'm able to get equipment through my commercial suppliers, like Peterson's,

but that's usually "special order" and I have to wait a few weeks for it.

I shop for a lot of chocolate molds and cake deco supplies up at Home Cake Decorating

in the Maple Leaf neighborhood. Everyone's favorite cake decorating dive. Never liked

her prices though.....she knows she's the only game in town and she can get away with

it. Dawn's Craft place is fairly new, and maybe she might create enough competition to

get Home Cake's prices to come down.

I've never shopped at Bargreen's.....they MIGHT have what you need.....not sure.

You know, this town really needs a comprehensive, full service pastry and baking supply

store....any entrepreneurs out there?

They have one at the downtown Sur la Table but it's about 2 inches across and 1/2 inch high for $25. But it's not the dimensions in the link you provide. :sad:

Dawn's probably won't have the cannele mold you want nor will Home Cake Decorating. BUT, for general cake decorating supplies shop at Dawns first. Her prices are so much better than Home Cake Supply. Just for an example Home Cake sells CK gumpaste mix for around $3.99 while at Dawns the same product is about $2.99. I don't buy that brand anymore because I tried and really like working with Nick Lodge's recipe instead. Dust (luster, super pearls, and petal) are on average $1 less at Dawns. Dawns sells Pettinice fondant 15 for $50. She also carries alot of products Home Cake doesn't ie Elegant Lace Molds impression mats, Chef's Rubber(make your own molds), and different gumpaste cutters etc. She primarily sells chocolate making supplies and has tons and tons of molds (and even a punch card buy several molds and get one free). Dawn will also special order anything you want.

The mark up on some items at Home Cake is ridiculous---a $6 cutter (Tappits) being sold at her shop for $24!!! So know your prices before you shop there.

I want to second the recommendation of Deborah for Dawn's Craft and Chocolate. As a Home baker and chocolatier I have been able to do a lot of things because Dawn has been able and willing to special order things that are not readily available. The Passion fruit and mango purees necessary for the Exotic Orange Cake are Examples as well as the molds that I made from the Chef Rubber products that she carries. I used the Chef Rubber to make molds for the Exotic Orange Cake

She also has one of the largest selections of transfer sheets in this area.

I'm glad you liked her shop as well. She really is so willing to get what you need if she doesn't carry it.

Until FWED drops by...he showed me his molds (yeah, molds collection, not etchings!) and he made molds for the circle and heart interiors of the cakes. That's how he gets those pristine edges. His basement is a pastry geek's wonderland, complete with spray booth.

Thanks for the kind words. Yes the cakes taste as good as they look. It is due in great part to the products that Dawn orders in for me.

The Molds are used to create a space in what is to be the top of the cake. This space can then be filled with what ever you would like. The cake is constructed upside down and when frozen and turned right side up the mold ends up on top and can be easily removed. I made the molds just recently but started with home made molds consisting of several layers of card board cut outs wrapped in plastic wrap. I decided that since this form of cake is one that I would like to do again and again that it was worth it to make the food grade silicone molds. Here is a picture of the molds and how they are placed in the ring.

I know that Wendy has suggested using a cake pan, freezing the jelly and then placing the bavarian cream around it. Thus avoiding the mold altogether. This will work but does not allow me to spray the chocolate in a precise manner. The WOW factor of this cake is not only the taste but the look of the cake and so that is why I chose to spray the chocolate and place the jelly afterward. Spraying chocolate is really quite simple and I would be glad to share the little information that I have with you. Just PM me.

How interesting FWED! I love hearing about the process of making fabulous creations! I too was curious where you used a mold for these beautiful cakes. The chocolate spray provides such a delicate and finished look(and well...it's chocolate YUM!).

Have you tried making anything else with the Chef's Rubber and/or any other silicone products? I really want to try making some of my own molds for fondant and gumpaste. Was the Chef's Rubber easy to use? Did you need to buy anything else to make it work?

Hi Deborah. To answer your question no I haven't used it for anything other than the molds and yes the chef rubber was easy to use. The product that Dawn has is self contained except for mixing tools and bowls. The only recommendation that I have is to mix the two components in a heavy paper cup/bowl so that clean us is simplified. Just throw the dirty cup/bowl away. Chef Rubber has several formulations and this is one of the softer ones. It would be good for very intricate items. The product does come with directions but does take some thinking about as to what to use to hold the setting rubber around the item to be duplicated. Chef Rubber also has a web site at Click here!. I'd love to try spraying chocolate. Problem is, if hubby found out what I was doing, he'd get "ideas". He'd want to spray ME. Then of course, I'd have to spray him. Then we'd never get

anything done. Heck, we've only been married a year.....we're still newlyweds.....haven't
