I love how we can go from fingerling potatoes to duck fat in a matter of one post. :biggrin:

Duck fat sounds great. I'll have to try that since I love fries cooked with duck fat.

However, I like to do them with some bacon, and oddly enough, some fava beans. Sounds weird, but tastes great.

Half or quarter, and quickly brown the cut sides in olive oil in a hot saute' pan...

Remove and toss in Olive Oil, Rosemary, black pepper, salt and Italian Parsley...

with...

onion quarters (browned with the tatos) and a bunch of unpeeled whole garlic cloves all seasoned similarly...

Add a dozen chicken thighs (seasoned the same) and it's a downright decadent dinner...

Lay it all out on a baking pan with the Potatoes, Garlic and Onions stuck inbetween the chicken pieces...

Bake till everything is golden... This is a real pleaser!
