Hi,

Am slow roasting some pork belly for a dozen friends, and will probably serve with polenta or mash. Would be really grateful for suggestions of what sauce to serve with it, apple is the obvious one but perhaps seems a bit cliched.

Chipotle or ancho with orange, cumin, shoyu, shallots.

Gramercy Tavern, who in my knowledge pioneered cooking this cut in contemporary restaurants, serves it in a mostarda di frutta like you would serve with a bolito misto. It's quite good and sweetness pairs well with the fattiness of the bacon.
