I was at a local organic the other day and some guy bought $70 worth of celery...

You are not far off!  Lately I have seen some crazy celery prices.  Albeit organic, but $4-5....come on, this stuff is basically just fiber and water!

Give me a break ... by no means that the ultra-organic, hand-plugged by Bolivian albino orphans at full moon, cleaned with triple distilled deionised water and endorsed by at least three TV doctors on two continents stuff that I would use in my Mirepoix !

So how much celery does one have to consume to reach a "no go' level?

 

ahhh...got it.   "But this naturally occurring nitrate is also never harmful in any way, shape or form. Celery juice powder and celery powder have oxidized so they can contain naturally occurring nitrates because that developed through the oxidation process. ... Fresh celery juice also doesn't contain nitrites."

now , celery is No GreenBellPepper

 

but its been thinking about it for quite some time.

 

If I want a bit of celery flavor , I use just the leaves

 

dried , from Penzey's.

 

come to think of it , that Penzey's bag is getting really really old.
