Hey all!

 

I have my parents coming over for dinner Saturday and want to make something nice for them.

 

I have beets, carrots, squash blossoms, and ribeye.  Any ideas? My thought is sous vide ribeye with carrot purée, roasted beets, and a parsley oil.

Maybe a beet and carrot gratin? Then stuff and fry the squash blossoms. Both should go nicely with ribeye.
