does anyone recognise this grate/grid that Antonio Bachour is using in this picture.....or what the correct name for this bit of kit is....?

Looks to me like a bog standard cooling rack.

yeah it's the feet that makes me want it. 

 

I did google "grate feet" but didn't like the photos!

They might have soldered the feet on themselves. Every pastry chef instructor I know has some equipment they customized themselves.

This cooling rack on amazon.com has 2.2" legs and is purple!

I've bought stackable cooling racks with folding legs from places like Walmart over the years. They can lie flat as a conventional rack, or stand 4"-5" high if needed.

Making your own would be cheapest option, but a quick search on "folding cooling rack" produced quite a few racks, several on Amazon.
