Can anybody help me out to find this great guanciale from Virginia? We used to buy it from Heritage meats at Essex mkt in Manhattan but they just told us they are not going to carry it anymore. Of course my husband tried to ask the name of the producer and they didn't want to give the info. They are only going to carry that crappy Batali's guanciale from Seattle.

The guanciale we are so in love is not too salty, not too heavenly spiced and quite smoky. Perfect texture. Comes from Virginia.

This butcher shop claims to make their own guanciale - could this be the one? I don't know what theirs tastes or looks like, or if they even sell to places in NYC, but perhaps the name is familiar?

There is also Jowciale from Surry Farms which I believe is made in Virginia.

 

Seems Heritage Foods board includes ... Mario Batali ... so I am not surprised they have switched brands. :(

I didn't think guanciale was smoked...but maybe you mean it has a smoky flavor from the cure?

 

I like the product from Salumeria Biellese. They may carry it at Formaggio Essex. And/or Buon Italia in Chelsea Market.

 

The smoky flavor is definitely there. The Buon Italia guanciale is my 2nd best preference. My husband tried all guanciale at Eataly, even the expensive mangalitsa (I'm not sure if that one is from Salumeria Biellese) but we still love better the LOST guanciale. I'll look for the regular Salumeria Biellese guanciale.
