Hello,

First of all, sorry if I've posted this in the wrong section of the forum.

 

I spent the last 3 weeks collecting the opinions of 55 different professional knife sharpeners, asking them:

"What's your best tip to a beginner that's just starting out sharpening knives?"

I thought you could be interested in reading the final results.

You could also start with the eGCI class "Knife Maintenance and Sharpening" (click)

 

The class instructor, eGullet member Chad Ward, went on to write a well-reviewed book about the subject: "An Edge in the Kitchen"

Toliver, I must add that as good as Chad's class is, having a ton of videos now (11 years later) is just as, if not more helpful - at least to get a basic understanding of what's going on - Chad's class might be better read after seeing a few videos by people that know what they're doing - to provide further detail and background.

I used Chad Ward's class to get started, learning to hand-sharpen. I then moved on to using an EdgePro Acme and have never looked back. It came with a video that can also be viewed on the EdgePro website.
