[Modernist Cuisine] Microwaved Tilapia (5•217 & 6•92)

Anybody try this? What other types of fish have you used?

I tried it with relatively cheap frozen skinless Tilapia (I was shopping on xmas eve). It was a great success, I once again proved the skeptics wrong. There was a lot of liquid on the bottom of the plate, probably related to the frozen-ness of the Tilapia so I had to be careful when serving. I havent experimented with it though, so I would also like to hear what other people have done.

Hi, this recipe calls for setting the microwave to 600 watts but MCAH says 800 watts. I don't have it in front of me but is this because it's a different fish or is one of these wrong?
