Hi,

For those in Australia I have been sourcing ingredients for modernist cuisine and have put together a few kits, which are currently up on Ebay.

You can view the kits at the Australian Ebay site.

This is not a business, it was just more economic for me to buy in larger quantities than to buy 20g of stuff at a time mail-order. Once these kits go, there will be no more…

Very nice idea Chris. I just got my copy of MC and have started looking for some of these items in the US. Did you try to stick to the brand names that are often suggested in MC or buy generic ingredients?

For the less common ingredients - those immediately identifiable as used in molecular gastronomy - I used feedback and advice from members of the eGullet site, there's a thread devoted to the topic of sourcing ingredients for Modernist Cuisine. It basically came down to sourcing from either whipped cream supplies in the UK, or Willpowder in the US - I went with Willpowder because the shipping was cheaper. Both were very helpful with emails though, and each has a slightly different range. Willpowder stocks N Zorbit but not Gellan, Whipped Cream Supplies the other way around for example.

The Gellan in the kits is direct from CP Kelco.

The more common ingredients, such as the food acids, were sourced locally from a few different online wholesalers. While I could be wrong, I didn't think there would be much variation between citric acid suppliers, for example.

But if you're in the US then I can recommend Willpowder, but head over to eGullet and read the thread on suppliers. I'd post the link but as I'm writing this their servers are down for maintenance.

Just like to add that Citisuper near Woolworths town hall is probably one of the best stocked Asian supermarkets, I found powdered agar there for $1.39 or something per 25g way better than any of the online resources.

They also have things like acetic acid, maltose and a lot of other random ingredients, also Thai Kee on Cambpell St have powdered lime which may be able to replace the lye in some of the recipes. Maybe somebody else can confirm?
