stainless steel hemostats are IDEAL for removing fish bones.

you can buy them on ebay for $4-$10, they should last forever.

be sure to sanitize them prior to any use with food. dunk in bleach overnite, wash throughly.

they are the best way I know to pull out salmon bones! you will not be disappointed.

Sure - surgical scalpels are absolutely invaluable for garnishes and other fine cutting applications (I'm back to cake decoration; I use a scalpel to cut out fondant decorations), and you can maintain perfect sterility by simply replacing the blades once you're done.

For those of you who prepare whole fresh fish, stainless steel locking hemostats are IDEAL for clamping on to the tail while you scale the fish.
