Pineapple

I have a friend who wants something pineapple-y, and being that I'm "the baker" he knows, I'd like to make it something fabulous beyond the usual upside down cake. Under the circumstances, it should be something home-y, perhaps a bread, cookie, or cake concoction. What'cha got that you LOVE? I also have some really great dried pineapple (i never thought there was such a a thing until I found this!), and would love some ideas on how to utilize it, short of sticking it straight in the gob, which is where it's been going. ;)

I've been fiddling with pineapple-infused rums lately, and the results have been excellent. Howsabout a pineapple rum fruitcake, using the dried pineapples along with raisins, mangoes, macadamia nuts... with homemade pineapple rum raisin ice cream... sorta like that?

I have a recipe for a pineapple cream pie that's "homey". It's good but I wouldn't call it "Fabulous!". It's basically a custard pie with canned crushed pineapple in it (I think you can't use fresh pineapple in it due to the enzymes in fresh pineapple).

You can sautee some pineapple with a bit of sugar and some vanilla (bean or extract), get a good carmalization on it, then puree it in a blender and fold it into a nice buttercream frosting! Use that to ice a cake or maybe a nice orange or bananna cupcake?? Dice the dried pineapple and spainkle on top of your iced treat for a little added flavor!

How about a pineapple tart? February 2008 Gourmet had a pineapple gallette using fresh fruit. I can't recommend canned; I made a pineapple tart with canned crushed pineapple. The sweetness overwhelmed the pineapple taste.

If you have Maida Heatter's Cakes book or the first Great Desserts book, she has a recipe for Haleakala Cake. It's a basic white cake (with beaten egg whites) layered with a pineapple filling made from canned crushed pineapple.

here's how I would make the filling:

Stir together 2 TBL cornstarch, 2 TBL granulated sugar, a pinch of salt, and add 2 cups pineapple juice. and some vanilla. Put it over medium heat until it boils, then simmer for two minutes (remember to stir this to prevent lumps) then let it cool and add the crushed pineapple. You will probably need 2 19 oz cans of crushed pineapple. You can use this as a spread for toast, too :biggrin:
