  1. I have never made hasselback potatoes. But if I were to try, I think the guide might be a help.
  2. Methode rotus does more than cover sins. I am ashamed to have posted such a blurry loaf last night. Now, in the cold light of afternoon, I believe I have the offending photograph replaced. And I'm about to go cut another slice or two to befriend an omelet.
  3. First time I've baked a full kg boule in many months... Humorously I'd forgotten the proportions and I ended up with a batter, not a dough. Thankfully a mai tai and liter of methode rotus cover many sins.
  4. Dinner here tonight is a northern Indian curry with Tilda Basmati to break in my new Zojirushi. @KennethT I hate to witness someone else's pain. Around these parts I can think of Englishtown, Frenchtown, Germantown, and Quakertown. Without bothering to get out an atlas or a map. None of these place names currently imply racism or opprobrium. If it matters, I am a Quaker and "Quaker" is a religious slur. In parts of this country Quakers were whipped, banished, mutilated, and put to death. And dying by exposure in the wilderness, not even permitted to live in ghettos. But knowing the effect on others I would hesitate to use the name of the ancient Keralan town in question. Even though, however unlikely, I would like to visit it.

  6. The sardines I found in house are Glyngore, from Denmark. Though I hesitate to sample them. For some reason there is no "best by" date listed. However the price sticker on the can is from a market near where I used to live. I have not been to that market for forty something years. On the plus side the marked price is 89 cents. How's that for a way to overcome inflation? Somewhere, not sure which room, I have older sardines, more thoroughly aged than the Glyngore mentioned above. Though as I recall the sardines in question are packed in mustard sauce, and thus, in my opinion, not worth organizing a searching party for. I once tried Wild Planet tuna packed in oil. I thought Wild Planet as a brand was awful. And a lot more than 89 cents a shot. Do canned sardines expire or do they live on forever?
  7. I have some Dr. Oetker chocolate pudding purchased on the recommendation of a friend. It is about fifteen years old. Not sure how it would be on pizza.
  8. I am familiar with Matiz. I was just wondering if there was something that made Portuguese sardines (or other Portuguese fish products) better to account for the higher cost?
  9. Strange. Rather than horses I expected you to be serving up marsupials, snakes, or spiders. May I suggest as a beverage accompaniment methode rotuts? MR goes well with anything. Or anyone.
  10. I read that NY Times sardine article yesterday at work. Pricy sardines however. Nonetheless the article made me want to purchase some. Amazon prices are ridiculous. Supermarket Italy is more reasonable. Still, what makes Portuguese little fishies so much more expensive than Spanish? Not a trivial concern as my boss is a Spanish speaking Iberiophile, while her boss is Portuguese.

  12. Amazon Prime. I was wondering why @weinoo couldn't get the same prime day deal on McConnell's.
  13. For US readers the prime day price is $129.99. I had to remove my creami (I'm tired of typing uppercase) chocolate from the blast freezer to make room for six pints of prime day McConnell's.

    Arctic char, thick fillet, full blast in the APO, 8 minutes exactly, no cheating. Thermapen ONE registered 55C. French fries, as in hot, hot fat. Lemon and coleslaw. One of the finest meals I have had in some while. I always enjoy arctic char but tonight's was exceptionally well prepared. Rum and methode rotuts, which may explain no photograph. Bowl of first of season Ranier cherries, which need no explanation.

  18. But only two in stock. People talk trash about Cybernox, but for twenty years Sitram Cybernox has been my goto pan for a fried egg. Nothing better. Eat your hearts out air fryer fans. And before they were collectors' items Cybernox prices were quite reasonable. However I am confident the pan in question is indeed not Cybernox.
  19. The Sitram pans I have are plenty stable. I have a similarly shaped Fissler pot, but while the Fissler and Sitram handles are similar, the holes in the Sitram handles are slightly oval, whereas the holes in the Fissler handles are round.
  20. The rondeau? I haven't used it yet. My other Copper Coeur pieces work well.
  21. Six are the most I can fit in my blast freezer.
