    CSO baked red snapper. Recipe adapted from the CSO recipe booklet. Snapper baked with fennel, orange, lemon, garlic, shallots, thyme, oregano. A little fennel pollen never hurt.
  2. Rose suggests that one can add butter, but personally I would not bother.
  3. I believe that is correct for all the recipes in her book.
  4. Rose adds that most other mango pulp tastes like peach. Not that peach is a bad thing.

Rose Levy Beranbaum's mango recipe calls for: Alphonso mango pulp, preferably Ratna brand 333 grams cornstarch 9 grams milk 121 grams heavy cream 348 grams sugar 150 grams glucose or reduced corn syrup 63 grams fine sea salt a pinch large egg yolks 112 grams (6-9 yolks) pure vanilla extract 1/2 teaspoon freshly ground cardamom to taste (optional)

  13. Loaves larger than normal because I forgot to reserve dough for pizza.
  14. I verified with Anova, the interior height is 12.4 inches and the depth is 10 inches. Interesting that there are almost 8 inches of otherwise unaccounted stuff between the interior and exterior depth. Of course the handle with the controls and indicators is probably some of that.

    @Kim Shook my fries tonight, cooked from frozen, were as good as any I've made fresh. Maybe better. As good as fries from a Belgian restaurant? Probably not. I am not complaining.
  17. There was a comma in there. Nonetheless the potatoes came out great. I heated the oil (not using the Paragon) on high till the Thermapen read close to 180C. Added the potatoes in the basket and cooked for four minutes. Hard to ask for better.
  18. Some while ago I obtained a deep fry basket for one of my Fissler pressure cookers. The problem is I can find no way to use the basket with the probe. I could be wrong but I doubt the Control Freak probe would work much better. I tried using the Paragon mat for deep frying but the oil never got quite hot enough. I'm about to go fry some potatoes, soon as I finish my mai tai, over direct heat -- in case you never hear from me again.
  19. Several years ago when Amazon Fresh (not to be confused with Amazon Prime Now) was still delivering to my area, one of the third party food purveyors whose products were available from amazon was an Australian meat pie company in Philadelphia. Other people sold scrapple.
