  1. 8 chicken thighs and 2 leg quarters went into the bath yesterday @ 165f for ~ 6-8 hrs. Salted and stuffed with thyme and rosemary under the skin before bagging. Iced down and in the fridge. Will make 5 meals in the weeks to come.

    Not sure what's exactly for dinner but I just took 3 small eggplants off the grill. I have more grouper to cook, so the options are open.

  8. @weedy thanks for posting the vid. I love carnitas but my wife doesn’t eat pork. I’ve used beef but who can resist crispy duck leg carnitas.
  9. I often grill them until soft with blackened skin. Peal and purée for baba ganoush. Traditional or what I call "white" by using mayo in the blend. Although it sounds odd, it works

    Made a frittata with stuff from the fridge. A dish of roasted potato cubes, white corn, and diced grape tomatos. Just pan roasted the corn to get color and dry it out a bit then added the other ingredients and 2 scrambled eggs to the pan on the stove top. Topped with slivers of a Belgium cheese and slipped it into the toaster oven just under the heating element until it set. A quick little breakfast for 2 to start a Sunday morning

    Ended up doing some fill in work today so got home late and with little in the fridge had to make due. A head of celery was sliced thin and mixed with other remnants from the fridge. Green olives, parmesan cheese, walnuts and dried orange peel made its way in the salad. An orange based dressing was ready from the other day. Found a piece of amberjack in the freezer to complete the meal. I had not made a celery salad like that before. It was good enough to make again

    Fresh ground chuck burgers with condiments of sliced grape tomatoes, pickles and arugula with a gochujang/mayo spread. Side of roasted red potatoes and carrots

    Started our day with dry rolled oats hydrated with almond milk and fresh blueberries. Not very sexy but hits the spot, keeps me satisfied through the day but now it's dinner time and need to move forward into something more substantial. Have hamburger buns on the counter and frozen burger patties in the freezer. Time to get moving

  21. My every day cut is chuck for a burger. Short ribs definitely add flavor to the blend. All too often packaged short ribs have too little meat to make it worth it but when I see big meaty ones I buy!
  22. The lamb breast at WM are on the bone. At least the ones I’ve bought. More like lamb spare ribs. And yes they are very fatty, which is why I cook them on my smoker and keep the mess outside. Plus they are great off the smoker

    Just a quick little dinner of scallops, corn relish and arugula leaf salad. Using my Darto pan I was not able to get enough color on the scallops without over cooking before they released
  25. Made a corn chowder today for lunch or what ever. Inspired by the couple bags of cobs in the freezer and a few fresh ears that needed to get used along with a long sweet red and poblano pepper in the fridge. Always love when cleaning out the fridge turns into something delicious. Beats cleaning out your closet
