Doing some catching up! I spent the week of Thanksgiving in New Mexico; first visiting with family in Las Cruces, then birding with friends in Socorro at the Bosque del Apache NWR for four days, and then back to Las Cruces for a day after Thanksgiving dinner with my mom and her husband. Thanksgiving day turkey dinner was at the restaurant next to our motel in Socorro, the same place where we had breakfast most days. The photos of the meal came out blurry but the food was really tasty and plentiful. We had the senior's plate for $7.99 which included turkey with stuffing, mashed potatoes, gravy, corn on the cob, a salad, a dinner roll and pumpkin pie. We all got the pumpkin pie to go! Back in Las Cruces, our day after T-day dinner was a small fresh turkey that had been split to cook on the grill. Due to issues with the grill, the bird was baked in the oven and having it split made it so easy.

I had this breakfast at the El Camino Restaurant and Lounge three out of four days while visiting Socorro, NM over the week of Thanksgiving. $5.99 bought you two eggs (any style), hash browns, choice of bacon, ham, or sausage (links or patty), and toast.

Grilled New Zealand Lamb Chops and Asparagus. The lamb chops were rubbed with a mix of crushed garlic, fresh rosemary, fresh thyme, cayenne, coarse sea salt and olive oil. The asparagus was marinated in a balsamic vinaigrette. We also had a Caesar side salad.

I was away for the holidays, so have no leftovers, but found enough ingredients in the fridge, freezer and pantry to make a Country Captain, served with naan to soak up the gravy.

One of my lady friends and I got together the other day to catch up, lunch and shop. Lunch was a return to Cheddar's in Webster. She chose the Lemon Pepper Grilled Catfish with Broccoli Cheese Casserole and Carrots. (Sorry for the blurry photo.) I had the Chicken Tenders and Shrimp with Mashed Potatoes and Corn. (The corn was in a separate dish off to the side and didn't make it to the photo shoot.) The Honey Mustard that came with the Chicken was good but the Gravy was better, so I asked our waiter to bring some more. Happy, happy! After our meal, we spent about an hour and a half wandering through the newly opened Container Store across the highway. Lots of neat stuff!

The Salad I did not have with Dinner last night was today's Lunch, with some of this morning's bacon added. A mix of romaine and baby greens with chopped hard cooked egg, sliced button mushrooms, ripe black olives, roma tomato, shredded cheese, the bacon, slivered almonds and crunchies with a honey mustard dressing.

The plan was grilled pork steak, a salad and fresh baked bread. Everything was made but... ...after this, I was full. Leftover pork steak and salad in the fridge for tomorrow!

I grew up in St. Louis and toasted ravioli is still one of my favorite foods. Meat filling preferred. -
Today, my husband and I stopped for lunch at the Los Cucos Mexican Cafe in Friendswood. He had the Pork Tacos - two corn tortillas filled with pork carnitas mixed with onions, peppers and cilantro; served with refried beans, Mexican rice and salsa verde. I had the Tacos Plazeros - one each beef fajita and pork carnitas in corn tortillas topped with grilled onions, queso fresco, cilantro and avocado; served with borracho beans, pickled vegetables, pico de gallo and salsa verde.

We had our 41st Anniversary celebration dinner a day early at the new Perry's Steakhouse and Grille in Webster. Yes, we got married on Halloween! The view of the kitchen from our table. Warm loaf of bread with whipped butter. Cherry Pepper Calamari Starter I had the Filet Perry - 6 oz, topped with jumbo lump crabmeat and served with steamed asparagus My husband had the 14 oz Prime Ribeye (sorry for the dark photo; the lighting was not as good over his plate). We shared the Lyonnaise Potatoes.

Used up some bits and pieces last night. Not a really photogenic meal, but very tasty and satisfying! The last of the Jalapeño Pork Sausage (simmered), Russet Potatoes (peeled, chunked, steamed and squished) topped with butter, salt and black pepper, and a Napa Cabbage Salad (with buttered and browned ramen noodles, slivered almonds and sesame seeds).
