Anna, I did the same thing a few days ago. I now have an inventory and have it posted on the door of the fridge. Having the list right there in front of me helps when deciding what to make and reminds me to use some of this before I buy any more! I did toss a few things while doing the inventory! I have the inventory sheet on my iPad, so I will update it every once in a while and print a fresh copy.

Tonight's dinner will be Beef Chili with Beans (from the freezer) topped with Shredded Cheese and Green Onion with Saltine Crackers. Tomorrow's dinner will be Pizzas made from (frozen) homemade dough (dated Oct. 13) currently thawing in the fridge. Toppings to include homemade Marinara Sauce, Pepperoni, Pork Sausage and Prosciutto (all from the freezer) and Mozzarella and Mushrooms (both from the fridge). Some chopped onion, black olives and jalapeños will also make an appearance. Pizza inspiration came from Ann_T's awesome pizza photos on the Dinner Topic!

Tonight's dinner, as posted on the Dinner Topic, used up a small portion of Pork Tenderloin and some Chicken Bone Broth from the freezer, while giving equal time to Habaneros Apricot Jam and Broccoli from the fridge and Jasmine Rice from the pantry. Not seeing any matching letters! But, only a little bit of the Rice was leftover and I will dispatch that in the morning.

Thank you for the welcome! I wasn't able to match any one of today's meals with similar letters, but each meal did include ingredients taken from the freezer and no new items were added. For breakfast, I had a couple of (from frozen) pork sausage links with my scrambled egg. Lunch was a pork dumpling soup made from frozen chicken bone broth and potstickers. Dinner was the same as lunch, using up the last of the soup. Baby steps!

Apparently it is true! Nature abhors a vacuum. We had been making some good progress, but today we went to Sam's, together. We always get more stuff when we shop together. Nothing we bought duplicates what is already in the freezer but we are definitely at capacity! I even had to take the reusable freezer packs and two bags of flour out to make room for today's purchases

I know I learned this method on eGullet but can not find it. So, when I make beans from dried, I put 8 oz. of beans in an ovenproof pot, cover them with 2 to 3 inches of water and let soak for one hour. At this point I heat a tablespoon of bacon drippings in a skillet and cook some onion and garlic just to soften and when the beans are done soaking I add this to the beans. Bring the beans to a boil and cook for 5 minutes at steady boil. Preheat oven to 250 degrees F. Cover pot and transfer to oven. Set timer for one hour. Check the beans after the hour, add salt and more water if necessary to keep the beans well covered. Continue to cook in the oven for another 15 minutes or until tender.

When I make this dip, I use 1 lb. Velveeta, cubed, 4 oz Monterrey Jack, cubed, 5 oz Evaporated Milk, and 10 oz Rotel Tomatoes and Green Chiles, drained. I add all ingredients to a crock pot and heat on low, stirring occasionally, or heat in the microwave on a low setting, stirring every few minutes. It is ready when melted and bubbly. Have not had the clumping problem with this recipe.

Five Spice Broiled Pork Chop with Worcestershire Sauce and Green Onion and Stir-Fried Snow Peas, Red Bell Pepper, Mushrooms and Water Chestnuts with Garlic, Ginger and a Teriyaki Sauce

Tex-Mex Enchilada Casserole Leftover Taco Meat and Diced Duck Breast were mixed together with Hatch Tex-Mex Enchilada Sauce to create the filling for the enchiladas. Corn tortillas, softened in hot oil and drained on paper towels, were filled and rollled with some of the meat sauce, chopped onion and shredded cheese. After filling the baking dish with the rolled enchiladas, the balance of the meat sauce was ladled on top... ...and topped with more of the shredded cheese. The casserole was baked in a 350 F oven for 30 minutes, just to heat it through and melt the cheese. Served with sliced avocado.

In the time it took my husband to drive the short distance to Kroger and get back with the Fried Chicken, I made the mashed potatoes, gravy and peas! Very satisfying lunch. Leftover chicken will be what's for dinner tonight.

Don't know about Keller, but I used Ore/Ida Extra Crispy Fast Food Fries. Pan fried in a single layer in a 10" skillet in about two tablespoons of duck fat. Made two nice servings.

Thank you! I must confess that the Fries were from frozen and crisped up very nicely in the duck fat. And the Onion Roll, one of my favorites, is from our local HEB grocery store bakery.
