After our birding field trip this morning, my friend and I lunched at Gaido's on Galveston's Seawall Blvd. We had a window table with a fabulous view of the Gulf of Mexico. Fun times! She had the Shrimp Salad, which did not get photographed, and I had the Crawfish Fettuccine, which got photographed only after I had started to eat. I will be having the leftovers for dinner tonight.

On my own for dinner, not really hungry, blah, blah, blah... So I nuked a small baking potato and topped it with lots of butter, pepper, sour cream and some chopped green onion. Perfect!

Today my friend and I rode the ferry from Galveston to the Bolivar Peninsula and had our lunch at Stingaree in Crystal Beach. The restaurant is located on the second floor and situated on the intercoastal waterway, offering excellent views of the surrounding area. Unfortunately, I forgot to get a shot of the view, but I did get photos of our meal. Again, we both ordered the same dish, so I only had to take photos of my food! After placing your order, they bring you a bowl of their fresh cole slaw, which comes with every meal. And surprise, surprise, we had the Charbroiled Shrimp with French Fries. The shrimp are separated by a slice of onion, which is just as tasty as the seafood!

Due to household schedule changes, I moved the cooking up a day to today. I decided to take most of the meat off the neck bones, which gave me almost 16 ounces of stew meat, and I put the bones in the freezer to use another day. Beef Stew I browned the meat in the pot, then added beef broth, sweet vermouth, worcestershire sauce, minced garlic, a bay leaf, black pepper and salt and cooked on Manual at High Pressure for 15 minutes with Natural Release. Added the potatoes, carrots, onion and more broth and cooked on Manual at High Pressure for 7 minutes (will reduce to 6 minutes next time as the potatoes got a little too soft) and Quick Release. Thickened the gravy with xanthum gum, added canned green beans (drained), covered and left on Keep Warm.

I had a couple of bananas that needed to be used, so I made a batch of banana nut muffins with walnuts the other day. Banana Nut Muffin and Black Tea

Okay, I will be giving them a go on Friday. Potatoes and carrots waiting in the wings.

Yes, in the IP. I have made stew in the IP but have never used beef neckbones in any way. I am wondering if I can treat them much the same as oxtails.

I am seeking suggestions for the best way to make use these very meaty beef neckbones. Should I take most of the meat off the bones for stew and use the bones in another way? Many thanks!

I do love grilled shrimp! After birding on Galveston Island for several hours this morning with our Audubon group, my lady friend (who now has a working fridge) and I dined at Waterman's. We both ordered the grilled shrimp with asparagus and roasted potatoes. Below is the view from our table. Fun day!
