One of my lady friends and I are on a five day road trip. Our first stop was the Lady Bird Johnson Wildflower Center in Austin. We had lunch on the patio at the Cafe. We both chose The Tower salad.

Today I updated my Freezer Inventory. I think my freezer is pretty much under control now. Almost everything is a staples item and none of the proteins, except my stash of duck breasts, has been in there much more than a month or two. Duck Breast coming up soon!

I pulled the last little bit of Marinara Sauce from the freezer and used it to make English Muffin Pizzas for lunch today.

Pulled the last package of Pork butt steaks from the freezer to cook on the grill and will pair them with baked Potatoes for dinner tonight.

Last night was a night out for dinner to celebrate my birthday from earlier in the week. We dined at our local Maggiano's Little Italy. Calamari with Marinara Sauce to start. Bread to hold us until our mains arrived. I had the the Chicken and Spinach Manicotti My husband had the Steak and Mushroom Ravioli Special. He had almost finished his Asparagus before I remembered to take a picture. The steak medallions were mostly covered by onion rings, so he obliged me and turned his plate to give me the money shot! Lemon Cookies for dessert.

One egg scrambled, cooked in butter, salted and peppered. Hot tea.

After another hard morning of birding with my Thursday Field Trip class, several classmates and I enjoyed lunch at Galveston's Cajun Greek. One lady had the Spinach Chicken Burger with Cole Slaw. A knife was required for the Burger and half of it went home with her. Another lady ordered Grilled Salmom with Spinach, Rice and Avocado. She also left with a to go box. The third lady and I ordered the Thursday Lunch Special - Flat Iron Pork Steak (thinly sliced pork tenderloin rolled around boudin, breaded and deep fried) with Garlic Mashed Potatoes, Cajun Gravy and a Side Salad. I will be having my leftovers for Dinner tonight!

Guacamole - smash the avocado with a fork, sprinkle on some granulated garlic powder, salt and either lemon or lime juice, stir. Eat with tortilla chips.

The last of the Chili from the freezer to be served over Pasta and topped with Shredded Cheese for Dinner tonight.

I have pulled a 5 oz. piece of Pork Tenderloin and 8 large Shrimp out of the freezer to pair with Snow Peas, Red Bell Pepper and other Vegetables from the fridge to stir fry for tonight's dinner. Does not make much of a dent in the freezer but helps to use up some of the already on hand fresh veg.

I use a friend's recipe: Eli's Refried Beans Ingredients: - bacon or a little ham or salt pork... whatever is in the house - pinto beans, already cooked - some of the pinto bean liquid - roasted jalapeno peppers, to taste - Crema Salvadorena or Crema Mexicana (sour cream) Directions: Cook the pork til it renders and then add beans, liquid and jalapeños, heat up really well, mash the beans, add the crema and taste it....

After thawing, the Ribs spent 90 minutes in a 425F oven and have been sauced, wrapped in foil and put back into a 225F oven for an hour to finish. The Pinto Beans will be made into Spicy Refried Beans.

I have pulled a half-rack of Pork Baby Back Ribs (already seasoned) and one of three portions of Pinto Beans out to thaw for dinner tonight. Pork and Beans just go together!

Today a girlfriend and I had lunch with a cousin of mine who is down from Wisconsin and visiting Galveston this month. We met at one of our local favorites, The Sunflower Bakery & Cafe. I had the Crab Cake Salad. My girlfriend had the Grilled Amberjack. And my cousin had Tomato Basil Soup and half of an Egg Salad Sandwich on Muti-grain Bread. I resisted the temptation, but the other ladies each had a slice of the Chocolate Pie.
