Burgers stuffed with feta, with a sour cream/dijon mustard/chive sauce and air-fried home-made pickles. Sous-vide potato with sour cream and butter on the side. #BurgerMonth

These were wheat, and it was burritos, so deep frying was not an option. They were just unusually soft tortillas. I make Mexican food fairly regularly, it was just this time that the tortillas were uncooperative

they were plenty pliable, a little too pliable, they didn't crack, they actually tore apart.

Burritos (sorry, the tortillas proved to be too soft to properly fold. I shredded two of them trying) filled with chicken breast cooked sous vide in red wine, chorizo, Mexican Rice, aioli, and pico de gallo, with sauteed Brussels sprouts on the side.

OK, before I looked at the pic I thought it referred to a Joe Carcione Special, which is a totally different dish. This is wholly new to me and I think it may end up on next week's menu. Thank you!

Thank you! Tempeh (browned in sweet soy sauce first) for the protein, plus onion, peas, corn, mushrooms,thyme, pepper, garlic, and coriander. Gravy was made with home-made veggie stock. Topping is just basic mashed potatoes.

heh, thank you! Saag is basically an Indian curry that focuses on greens as the primary ingredient. Kabocha is a type of squash. So, the basis of this is a curry made with greens (spinach in this case,which would also make it a Palak) and roasted kabocha squash
